Ingredients

  • 🐟4 salmon fillets
  • 🥦1 lb asparagus spears
  • 🫒2 tbsp olive oil
  • 🧄1 tsp garlic powder
  • 🌶️½ tsp paprika
  • 🌶️¼ tsp black pepper
  • 🧂 salt
  • 🍋1 lemon
  • 🌿2 tbsp fresh parsley, chopped

  • For extra flavor, add a sprinkle of dried dill or red pepper flakes to the salmon seasoning.
  • Do not overcook the salmon; it should be moist and tender inside.
  • You can roast other vegetables like cherry tomatoes or bell peppers alongside for more variety.

Method

  1. 1Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. 2Trim the woody ends off the asparagus spears. In a bowl, toss the asparagus with 1 tablespoon of olive oil, salt, and pepper.
  3. 3Pat the salmon fillets dry with a paper towel. In a small bowl, combine the remaining 1 tablespoon of olive oil, garlic powder, paprika, salt, and pepper. Rub this mixture evenly over the salmon fillets.
  4. 4Place the asparagus on one side of the prepared baking sheet and the salmon fillets on the other side.
  5. 5Bake for 12-18 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender-crisp.
  6. 6Remove from the oven, squeeze fresh lemon juice over the salmon and asparagus, and garnish with chopped fresh parsley before serving.
