Ingredients
- 🐟4 salmon fillets
- 🥦1 lb asparagus spears
- 🫒2 tbsp olive oil
- 🧄1 tsp garlic powder
- 🌶️½ tsp paprika
- 🌶️¼ tsp black pepper
- 🧂 salt
- 🍋1 lemon
- 🌿2 tbsp fresh parsley, chopped

- For extra flavor, add a sprinkle of dried dill or red pepper flakes to the salmon seasoning.
- Do not overcook the salmon; it should be moist and tender inside.
- You can roast other vegetables like cherry tomatoes or bell peppers alongside for more variety.
Method
- 1Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- 2Trim the woody ends off the asparagus spears. In a bowl, toss the asparagus with 1 tablespoon of olive oil, salt, and pepper.
- 3Pat the salmon fillets dry with a paper towel. In a small bowl, combine the remaining 1 tablespoon of olive oil, garlic powder, paprika, salt, and pepper. Rub this mixture evenly over the salmon fillets.
- 4Place the asparagus on one side of the prepared baking sheet and the salmon fillets on the other side.
- 5Bake for 12-18 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender-crisp.
- 6Remove from the oven, squeeze fresh lemon juice over the salmon and asparagus, and garnish with chopped fresh parsley before serving.
