- 🍣4 salmon fillets
- 🥔500 g baby potatoes
- 🌿1 tbsp fresh dill, chopped
- 🫒2 tbsp olive oil
- 🍋1 lemon
- 🧄2 cloves garlic, minced
- 🌶️½ tsp paprika
- 🧂 salt and black pepper, to taste

Method
- 1Preheat oven to 200°C (400°F). Line a large baking sheet with parchment paper.
- 2Wash and quarter the baby potatoes. In a large bowl, toss the potatoes with 1 tablespoon of olive oil, minced garlic, paprika, salt, and pepper.
- 3Spread the seasoned potatoes in a single layer on one half of the prepared baking sheet. Bake for 15 minutes.
- 4Pat the salmon fillets dry. Season with salt, pepper, and the remaining 1 tablespoon of olive oil.
- 5After 15 minutes, remove the baking sheet from the oven. Place the salmon fillets on the other half of the baking sheet alongside the potatoes.
- 6Return to the oven and bake for another 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the potatoes are tender and golden.
- 7Remove from oven. Squeeze fresh lemon juice over the salmon and potatoes, then sprinkle generously with chopped fresh dill.
- 8Serve immediately and enjoy your healthy, flavorful meal!
