Ingredients

  • 🍣4 salmon fillets
  • 🥔500 g baby potatoes
  • 🌿1 tbsp fresh dill, chopped
  • 🫒2 tbsp olive oil
  • 🍋1 lemon
  • 🧄2 cloves garlic, minced
  • 🌶️½ tsp paprika
  • 🧂 salt and black pepper, to taste

Method

  1. 1Preheat oven to 200°C (400°F). Line a large baking sheet with parchment paper.
  2. 2Wash and quarter the baby potatoes. In a large bowl, toss the potatoes with 1 tablespoon of olive oil, minced garlic, paprika, salt, and pepper.
  3. 3Spread the seasoned potatoes in a single layer on one half of the prepared baking sheet. Bake for 15 minutes.
  4. 4Pat the salmon fillets dry. Season with salt, pepper, and the remaining 1 tablespoon of olive oil.
  5. 5After 15 minutes, remove the baking sheet from the oven. Place the salmon fillets on the other half of the baking sheet alongside the potatoes.
  6. 6Return to the oven and bake for another 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the potatoes are tender and golden.
  7. 7Remove from oven. Squeeze fresh lemon juice over the salmon and potatoes, then sprinkle generously with chopped fresh dill.
  8. 8Serve immediately and enjoy your healthy, flavorful meal!
