Ingredients

  • 🐟4 salmon fillets
  • 🍚1 cup quinoa, uncooked
  • 🥕2 cups vegetable broth
  • 🍋1 lemon
  • 🫒2 tbsp olive oil
  • 🧄1 tsp garlic powder
  • 🌿½ tsp dried dill
  • 🌶️¼ tsp black pepper
  • 🧂 salt, to taste
  • 🌿¼ cup fresh parsley, chopped

Method

  1. 1Preheat oven to 400°F (200°C). Rinse quinoa thoroughly under cold water.
  2. 2Combine quinoa and vegetable broth in a medium saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until liquid is absorbed.
  3. 3While quinoa cooks, pat salmon fillets dry. In a small bowl, whisk together olive oil, garlic powder, dried dill, salt, and pepper.
  4. 4Place salmon fillets on a baking sheet lined with parchment paper. Brush the olive oil mixture evenly over each fillet.
  5. 5Bake salmon for 12-15 minutes, or until cooked through and flakes easily with a fork.
  6. 6Once quinoa is cooked, fluff with a fork. Squeeze fresh lemon juice over the salmon and garnish with chopped parsley.
  7. 7Serve salmon alongside the fluffy quinoa.
