Ingredients
- 🐟4 salmon fillets
- 🍚1 cup quinoa, uncooked
- 🥕2 cups vegetable broth
- 🍋1 lemon
- 🫒2 tbsp olive oil
- 🧄1 tsp garlic powder
- 🌿½ tsp dried dill
- 🌶️¼ tsp black pepper
- 🧂 salt, to taste
- 🌿¼ cup fresh parsley, chopped

Method
- 1Preheat oven to 400°F (200°C). Rinse quinoa thoroughly under cold water.
- 2Combine quinoa and vegetable broth in a medium saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until liquid is absorbed.
- 3While quinoa cooks, pat salmon fillets dry. In a small bowl, whisk together olive oil, garlic powder, dried dill, salt, and pepper.
- 4Place salmon fillets on a baking sheet lined with parchment paper. Brush the olive oil mixture evenly over each fillet.
- 5Bake salmon for 12-15 minutes, or until cooked through and flakes easily with a fork.
- 6Once quinoa is cooked, fluff with a fork. Squeeze fresh lemon juice over the salmon and garnish with chopped parsley.
- 7Serve salmon alongside the fluffy quinoa.
