Ingredients

  • 🥩500 g ground beef
  • 🧅1 onion, grated
  • 🧄2 cloves garlic, minced
  • 🌿½ cup fresh parsley, chopped
  • 🌶️1 tsp cumin
  • 🌱1 tsp coriander
  • 🌶️½ tsp paprika
  • 🌶️¼ tsp cayenne pepper
  • 🥚1 egg
  • 🍞¼ cup breadcrumbs
  • 🍚1 cup basmati rice
  • 🍲2 cups beef broth
  • 🫒2 tbsp olive oil
  • 🧂 salt and black pepper, to taste

Pro tips

  • For extra flavor, lightly toast the spices in a dry pan before adding them to the beef mixture.
  • If you prefer a richer sauce, you can add a can of diced tomatoes to the rice and broth.
  • To prevent kofta from sticking, make sure your pan is sufficiently hot before adding them.

Method

  1. 1In a large bowl, combine ground beef, grated onion, minced garlic, chopped parsley, cumin, coriander, paprika, cayenne pepper, egg, breadcrumbs, salt, and black pepper. Mix thoroughly until well combined.
  2. 2Divide the mixture into 12-16 equal portions and shape them into elongated oval kofta or small meatballs.
  3. 3Heat olive oil in a large skillet or frying pan over medium-high heat. Add the kofta and brown them on all sides, about 5-7 minutes. Remove kofta from the pan and set aside.
  4. 4In the same pan, add the basmati rice. Sauté for 1-2 minutes until slightly translucent.
  5. 5Pour in the beef broth and bring to a boil. Return the browned kofta to the pan, nestling them into the rice.
  6. 6Reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and has absorbed all the liquid and the kofta are cooked through.
  7. 7Fluff the rice with a fork and serve hot, garnished with extra fresh parsley if desired.
