Ingredients

  • chickpeas2 cup boiled chickpeas
  • 🧅1 small red onion, finely chopped
  • 🍅1 tomato, deseeded and diced
  • 🥒½ cup cucumber, finely diced
  • 🌶️1 green chili, deseeded and minced (optional)
  • 🌿¼ cup fresh cilantro, chopped
  • 🍋2 tbsp fresh lemon juice
  • 🧂1 tsp chaat masala
  • 🥄½ tsp roasted cumin powder
  • 🧂¼ tsp black salt (kala namak)
  • 🧂 salt and black pepper, to taste

Pro tips

  • For an extra crunch, add a handful of finely crushed papdi or sev just before serving.
  • If you prefer a spicier chaat, do not deseed the green chili or add a pinch of cayenne pepper.
  • Store any leftovers in an airtight container in the refrigerator for up to 1 day.

Method

  1. 1Ensure chickpeas are well-drained and cooled if freshly boiled. If using canned, rinse thoroughly.
  2. 2In a large mixing bowl, combine the boiled chickpeas, chopped red onion, diced tomato, diced cucumber, minced green chili (if using), and fresh cilantro.
  3. 3Add the fresh lemon juice, chaat masala, roasted cumin powder, and black salt to the bowl.
  4. 4Toss all the ingredients gently until everything is well combined and evenly coated with the spices and lemon juice.
  5. 5Taste and adjust seasoning with additional salt and black pepper as needed.
  6. 6Serve immediately for best freshness, or chill for 15-20 minutes for enhanced flavors.
