Ingredients

  • 🧀200 g mozzarella balls, fresh mini
  • 🍅250 g cherry tomatoes
  • 🌿1 bunch fresh basil leaves
  • 🍯2 tbsp balsamic glaze
  • 🫒1 tbsp extra virgin olive oil
  • 🧂¼ tsp sea salt
  • 🌶️ tsp black pepper
  • 🥢12 small wooden skewers

  • For extra flavor, marinate the mozzarella balls in olive oil and herbs for 30 minutes before assembling.
  • If fresh basil isn't available, a tiny pinch of dried oregano can be used, but fresh is highly recommended.

Method

  1. 1Gently wash the cherry tomatoes and fresh basil leaves, then pat them dry with a paper towel.
  2. 2Drain the mini mozzarella balls from their liquid.
  3. 3Carefully thread one cherry tomato onto each skewer, followed by a mozzarella ball.
  4. 4Next, fold a fresh basil leaf and thread it onto the skewer, then add another cherry tomato.
  5. 5Repeat the pattern (mozzarella, basil, tomato) until the skewer is full or all ingredients are used, ensuring a tomato is on each end.
  6. 6Arrange the finished skewers on a serving platter.
  7. 7Lightly drizzle the extra virgin olive oil over all the skewers.
  8. 8Sprinkle with sea salt and freshly ground black pepper to taste.
  9. 9Finish with a delicate drizzle of balsamic glaze just before serving.
