Ingredients

  • 🥫400 g canned chickpeas
  • 🍚1 cup basmati rice
  • 🧅1 onion
  • 🍅2 tomatoes
  • 🧄2 cloves garlic
  • 🫚1 inch fresh ginger
  • 💛½ tsp turmeric powder
  • 🌶️1 tsp cumin powder
  • 🌿1 tsp coriander powder
  • 🥘½ tsp garam masala
  • 🌻2 tbsp vegetable oil
  • 🧂 salt and pepper, to taste
  • cilantro¼ cup fresh cilantro

Method

  1. 1Rinse basmati rice thoroughly, then cook according to package instructions. Set aside.
  2. 2Finely chop the onion, mince the garlic, and grate the ginger. Dice the tomatoes.
  3. 3Heat vegetable oil in a large pan or pot over medium heat. Add chopped onion and sauté until softened and lightly golden, about 5-7 minutes.
  4. 4Add minced garlic and grated ginger, cook for 1 minute until fragrant.
  5. 5Stir in turmeric, cumin, and coriander powders. Cook for 30 seconds, stirring constantly.
