Ingredients

  • 🫘½ can black beans, rinsed and drained
  • 🧀¼ cup shredded cheddar cheese
  • 🧀¼ cup shredded Monterey Jack cheese
  • 🌮2 flour tortillas (8-inch)
  • 🌶️1 tbsp salsa
  • 🧂½ tsp cumin
  • 🧂 salt and pepper, to taste
  • 🧈1 tsp olive oil or butter

Method

  1. 1In a small bowl, mash the rinsed and drained black beans with a fork until chunky. Stir in the salsa, cumin, salt, and pepper.
  2. 2Heat a large non-stick skillet or griddle over medium heat. Add half of the olive oil or butter.
  3. 3Place one tortilla in the hot skillet. Sprinkle half of the cheddar and Monterey Jack cheeses over one half of the tortilla.
  4. 4Spread half of the bean mixture over the cheese on the same half of the tortilla.
  5. 5Fold the other half of the tortilla over the filling, creating a crescent shape. Cook for 2-3 minutes per side, or until golden brown and the cheese is melted and bubbly.
  6. 6Remove the cooked quesadilla from the skillet and set aside. Repeat the process with the remaining oil/butter, tortilla, cheese, and bean mixture.
  7. 7Cut each quesadilla into wedges and serve immediately with your favorite toppings like sour cream or extra salsa.
