Ingredients
- 🫘½ can black beans, rinsed and drained
- 🧀¼ cup shredded cheddar cheese
- 🧀¼ cup shredded Monterey Jack cheese
- 🌮2 flour tortillas (8-inch)
- 🌶️1 tbsp salsa
- 🧂½ tsp cumin
- 🧂 salt and pepper, to taste
- 🧈1 tsp olive oil or butter

Method
- 1In a small bowl, mash the rinsed and drained black beans with a fork until chunky. Stir in the salsa, cumin, salt, and pepper.
- 2Heat a large non-stick skillet or griddle over medium heat. Add half of the olive oil or butter.
- 3Place one tortilla in the hot skillet. Sprinkle half of the cheddar and Monterey Jack cheeses over one half of the tortilla.
- 4Spread half of the bean mixture over the cheese on the same half of the tortilla.
- 5Fold the other half of the tortilla over the filling, creating a crescent shape. Cook for 2-3 minutes per side, or until golden brown and the cheese is melted and bubbly.
- 6Remove the cooked quesadilla from the skillet and set aside. Repeat the process with the remaining oil/butter, tortilla, cheese, and bean mixture.
- 7Cut each quesadilla into wedges and serve immediately with your favorite toppings like sour cream or extra salsa.
