Ingredients

  • 🍗500 g boneless, skinless chicken thighs
  • 🧅1 red onion
  • 🫑1 green bell pepper
  • 🧄2 cloves garlic
  • 🫚2 cm ginger
  • 🌿100 g fresh mint leaves
  • 🌿50 g fresh cilantro
  • 🌶️1 green chili
  • 🍦½ cup plain yogurt
  • 🍋2 tbsp lemon juice
  • 🌰1 tsp cumin powder
  • 🌿1 tsp coriander powder
  • 🟠½ tsp turmeric powder
  • 🫒2 tbsp olive oil
  • 🧂 salt and black pepper, to taste

  • For extra flavor, marinate the chicken overnight.
  • If using wooden skewers, soak them in water for 30 minutes before threading to prevent burning.
  • Adjust the amount of green chili in the chutney to your preferred spice level.
  • These kebabs are also delicious cooked in an air fryer at 190°C (375°F) for 12-15 minutes.

Method

  1. 1Cut chicken thighs into 1-inch cubes. Dice the red onion and green bell pepper into similar-sized pieces.
  2. 2In a bowl, combine chicken with half of the lemon juice, yogurt, cumin, coriander, turmeric, 1 tbsp olive oil, and season with salt and pepper. Marinate for at least 20 minutes.
  3. 3For the mint chutney, finely chop or blend mint, cilantro, green chili, garlic, ginger, and remaining lemon juice until smooth. Season with salt.
  4. 4Preheat your grill or oven to medium-high heat (about 200°C/400°F). Thread the marinated chicken, red onion, and bell pepper onto skewers, alternating as desired.
  5. 5Brush the skewers with the remaining olive oil.
  6. 6Grill or bake the skewers for 10-15 minutes, turning occasionally, until the chicken is cooked through and lightly charred.
  7. 7Serve the hot chicken kebab skewers with the fresh mint chutney on the side.
