Ingredients
- 🍗500 g boneless, skinless chicken thighs
- 🧅1 red onion
- 🫑1 green bell pepper
- 🧄2 cloves garlic
- 🫚2 cm ginger
- 🌿100 g fresh mint leaves
- 🌿50 g fresh cilantro
- 🌶️1 green chili
- 🍦½ cup plain yogurt
- 🍋2 tbsp lemon juice
- 🌰1 tsp cumin powder
- 🌿1 tsp coriander powder
- 🟠½ tsp turmeric powder
- 🫒2 tbsp olive oil
- 🧂 salt and black pepper, to taste
Pro tips
- For extra flavor, marinate the chicken overnight.
- If using wooden skewers, soak them in water for 30 minutes before threading to prevent burning.
- Adjust the amount of green chili in the chutney to your preferred spice level.
- These kebabs are also delicious cooked in an air fryer at 190°C (375°F) for 12-15 minutes.
Method
- 1Cut chicken thighs into 1-inch cubes. Dice the red onion and green bell pepper into similar-sized pieces.
- 2In a bowl, combine chicken with half of the lemon juice, yogurt, cumin, coriander, turmeric, 1 tbsp olive oil, and season with salt and pepper. Marinate for at least 20 minutes.
- 3For the mint chutney, finely chop or blend mint, cilantro, green chili, garlic, ginger, and remaining lemon juice until smooth. Season with salt.
- 4Preheat your grill or oven to medium-high heat (about 200°C/400°F). Thread the marinated chicken, red onion, and bell pepper onto skewers, alternating as desired.
- 5Brush the skewers with the remaining olive oil.
- 6Grill or bake the skewers for 10-15 minutes, turning occasionally, until the chicken is cooked through and lightly charred.
- 7Serve the hot chicken kebab skewers with the fresh mint chutney on the side.
