Ingredients
- 🍗500 g boneless, skinless chicken breast
- 🥔400 g potatoes
- 🫑1 bell pepper
- 🧅1 onion
- 🧄3 cloves garlic
- 🍶2 tbsp soy sauce
- sesame oil1 tbsp sesame oil
- 🌽1 tbsp cornstarch
- 🫚½ tsp ginger, grated
- 🌻2 tbsp vegetable oil
- 🧂 salt and black pepper, to taste
- sesame seeds1 tbsp sesame seeds, for garnish
Pro tips
- For extra spice, add a pinch of red pepper flakes with the garlic and ginger.
- Ensure your wok or skillet is very hot before adding ingredients to achieve a good stir-fry texture.
- Pre-chopping all your ingredients (mise en place) will make the stir-fry process much smoother and quicker.
Method
- 1Cut chicken into 1-inch pieces. In a bowl, toss chicken with 1 tbsp soy sauce, cornstarch, salt, and pepper. Peel and dice potatoes into small cubes.
- 2Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add potatoes and cook until tender and slightly browned, about 8-10 minutes. Remove from skillet and set aside.
- 3Add the remaining 1 tbsp vegetable oil to the skillet. Add chicken and stir-fry until cooked through and lightly browned, about 5-7 minutes. Remove and set aside.
- 4Add sliced bell pepper, chopped onion, minced garlic, and grated ginger to the skillet. Stir-fry for 3-5 minutes until vegetables are crisp-tender.
- 5Return the cooked chicken and potatoes to the skillet. Add the remaining 1 tbsp soy sauce and sesame oil. Toss everything together to combine.
- 6Cook for another 2-3 minutes, stirring constantly, to heat through and allow flavors to meld.
- 7Garnish with sesame seeds before serving.
