Ingredients

  • 🍗500 g boneless, skinless chicken breast
  • 🥔400 g potatoes
  • 🫑1 bell pepper
  • 🧅1 onion
  • 🧄3 cloves garlic
  • 🍶2 tbsp soy sauce
  • sesame oil1 tbsp sesame oil
  • 🌽1 tbsp cornstarch
  • 🫚½ tsp ginger, grated
  • 🌻2 tbsp vegetable oil
  • 🧂 salt and black pepper, to taste
  • sesame seeds1 tbsp sesame seeds, for garnish

Pro tips

  • For extra spice, add a pinch of red pepper flakes with the garlic and ginger.
  • Ensure your wok or skillet is very hot before adding ingredients to achieve a good stir-fry texture.
  • Pre-chopping all your ingredients (mise en place) will make the stir-fry process much smoother and quicker.

Method

  1. 1Cut chicken into 1-inch pieces. In a bowl, toss chicken with 1 tbsp soy sauce, cornstarch, salt, and pepper. Peel and dice potatoes into small cubes.
  2. 2Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add potatoes and cook until tender and slightly browned, about 8-10 minutes. Remove from skillet and set aside.
  3. 3Add the remaining 1 tbsp vegetable oil to the skillet. Add chicken and stir-fry until cooked through and lightly browned, about 5-7 minutes. Remove and set aside.
  4. 4Add sliced bell pepper, chopped onion, minced garlic, and grated ginger to the skillet. Stir-fry for 3-5 minutes until vegetables are crisp-tender.
  5. 5Return the cooked chicken and potatoes to the skillet. Add the remaining 1 tbsp soy sauce and sesame oil. Toss everything together to combine.
  6. 6Cook for another 2-3 minutes, stirring constantly, to heat through and allow flavors to meld.
  7. 7Garnish with sesame seeds before serving.
