Ingredients
- 🐔500 g boneless, skinless chicken breast
- 🥑2 avocados, ripe
- 🍋1 lime
- 🧅½ red onion
- 🌿½ cup fresh cilantro
- 🫒1 tbsp olive oil
- 🌶️2 tsp chili powder
- 🌰1 tsp cumin
- 🧄½ tsp garlic powder
- 🌽12 corn tortillas
- 🧂 salt and black pepper, to taste
Pro tips
- For extra spice, add a pinch of cayenne pepper to the chicken seasoning.
- Serve with your favorite salsa or a sprinkle of crumbled cojita cheese.
- Ensure avocados are ripe for the creamiest guacamole – they should yield slightly to gentle pressure.
- Leftover chicken and guacamole can be stored separately in airtight containers for up to 2 days.
Method
- 1Dice chicken breast into 1/2-inch pieces. Toss with olive oil, chili powder, cumin, garlic powder, salt, and pepper.
- 2Heat a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes, until no longer pink and slightly browned.
- 3While chicken cooks, prepare guacamole: Mash avocados in a bowl. Finely dice red onion and chop cilantro. Add to avocados with the juice of 1/2 lime, salt, and pepper. Mix well.
- 4Warm corn tortillas according to package directions (microwave, oven, or skillet).
- 5Assemble tacos: Spoon cooked chicken into warm tortillas, top with a generous dollop of guacamole.
