Ingredients

  • 🐔500 g boneless, skinless chicken breast
  • 🍦200 g plain Greek yogurt
  • 🧄1 tbsp ginger-garlic paste
  • 🌶️1 tsp ground cumin
  • 🌿1 tsp ground coriander
  • 🧡½ tsp turmeric powder
  • 🌶️½ tsp chili powder
  • 🫒1 tbsp olive oil
  • 🧅1 medium onion, finely chopped
  • 🍅400 g canned crushed tomatoes
  • 🥥120 ml light coconut milk
  • 🌿1 tsp garam masala
  • 🌿1 tbsp fresh cilantro, chopped
  • 🧂 salt and black pepper, to taste

Pro tips

  • For extra flavor, marinate the chicken overnight. The longer it marinates, the more tender and flavorful it will be.
  • If you prefer a smoother sauce, you can blend a portion of the onion and tomato mixture before adding the chicken.
  • Adjust chili powder to your spice preference; use less for mild, more for a fiery kick.
  • To make it even lighter, you can use a small amount of chicken broth instead of coconut milk, but it will alter the creamy texture.

Method

  1. 1Cut chicken into 1-inch cubes. In a bowl, combine chicken with Greek yogurt, ginger-garlic paste, cumin, coriander, turmeric, chili powder, salt, and pepper. Marinate for at least 15 minutes, or ideally 30 minutes in the fridge. 🐔
  2. 2Heat olive oil in a large non-stick pan over medium-high heat. Add the marinated chicken and cook for 5-7 minutes until lightly browned on all sides. Remove chicken and set aside. 🔥
  3. 3In the same pan, add chopped onion and cook until softened and translucent, about 5-7 minutes. If needed, add a splash of water to prevent sticking. 🧅
  4. 4Stir in the crushed tomatoes and bring to a simmer. Cook for 10 minutes, stirring occasionally, until the sauce thickens slightly. 🍅
  5. 5Return the cooked chicken to the pan. Add the light coconut milk and garam masala. Stir well to combine. 🥥
  6. 6Reduce heat to low, cover, and simmer for another 10-15 minutes, allowing the flavors to meld and the chicken to cook through. Season with additional salt and pepper if needed. 🧂
