Ingredients
- 🦐300 g prawns, peeled and deveined
- 🥒2 zucchini, medium
- 🧄4 cloves garlic, minced
- 🫒2 tbsp olive oil
- 🌶️½ tsp red pepper flakes
- 🌿2 tbsp fresh parsley, chopped
- 🍋½ lemon, juiced
- 🧂 salt and black pepper, to taste
Pro tips
- Do not overcook the zucchini noodles; they become watery and mushy.
- For extra flavor, marinate the prawns in a little garlic and olive oil for 15 minutes before cooking.
- Adjust red pepper flakes to your preferred level of spice.
Method
- 1Using a spiralizer or julienne peeler, transform the zucchini into noodles. Set aside.
- 2Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes; sauté for 1 minute until fragrant.
- 3Add prawns to the skillet and cook for 2-3 minutes per side, or until pink and opaque. Season with salt and pepper.
- 4Stir in the zucchini noodles and cook for another 2-3 minutes, just until they are slightly tender but still have a bite.
- 5Remove from heat, then stir in fresh lemon juice and chopped parsley.
- 6Serve immediately and enjoy your healthy meal!
