Ingredients

  • 🦐500 g prawns, peeled and deveined
  • 🧅1 onion, chopped
  • 🍅2 tomatoes, chopped
  • 🍚1 cup brown rice
  • 🥥200 ml coconut milk
  • 🧄2 tsp ginger-garlic paste
  • 🧡1 tsp turmeric powder
  • 🌶️2 tsp red chili powder
  • 🌿1 tsp coriander powder
  • 🌰½ tsp cumin powder
  • 🤎1 tbsp tamarind paste
  • 🥥2 tbsp coconut oil
  • 🧂 salt, to taste
  • 🌿¼ cup fresh cilantro, chopped

Method

  1. 1Rinse the brown rice thoroughly and cook according to package instructions. Set aside.
  2. 2Heat coconut oil in a pan over medium heat. Sauté chopped onions until golden brown, then add ginger-garlic paste and cook for another minute.
  3. 3Add chopped tomatoes, turmeric powder, red chili powder, coriander powder, and cumin powder. Cook until the tomatoes soften and the oil separates from the masala, about 5-7 minutes.
  4. 4Stir in the coconut milk and tamarind paste. Bring to a gentle simmer and season with salt to taste.
