Ingredients
- 🐔200 g chicken breast
- 🥬1 head romaine lettuce
- 🍞½ cup croutons
- 🧀¼ cup parmesan cheese, grated
- 🫒2 tbsp olive oil
- 🥣2 tbsp caesar dressing
- 🧄½ tsp garlic powder
- 🧂 salt and black pepper, to taste
Pro tips
- For extra flavor, marinate the chicken in a little Caesar dressing for at least 30 minutes before grilling.
- Make your own croutons by toasting cubed day-old bread with olive oil, garlic powder, and a pinch of salt.
- Freshly grated Parmesan cheese makes a big difference in taste.
Method
- 1Pat chicken breasts dry and season generously with salt, pepper, and garlic powder.
- 2Heat 1 tbsp olive oil in a grill pan or skillet over medium-high heat. Grill chicken for 4-6 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C). Remove from pan and let rest for a few minutes, then slice.
- 3While chicken rests, wash and chop romaine lettuce into bite-sized pieces.
- 4In a large bowl, combine chopped romaine lettuce with remaining 1 tbsp olive oil and toss gently.
- 5Add Caesar dressing and toss until the lettuce is evenly coated.
- 6Top the dressed lettuce with sliced grilled chicken, croutons, and grated Parmesan cheese.
