Ingredients

  • 🐔500 g boneless, skinless chicken thighs
  • 🫒2 tbsp olive oil
  • 🧄2 cloves garlic, minced
  • 🍋1 tbsp lemon juice
  • 🌿1 tsp dried oregano
  • 🌶️½ tsp paprika
  • 🧂1 tsp salt
  • 🧂½ tsp black pepper
  • 🫑1 bell pepper, any color, cut into chunks
  • 🧅½ red onion, cut into chunks
  • 🍢12 wooden skewers, soaked in water

Pro tips

  • Soak wooden skewers in water to prevent them from burning on the grill.
  • For extra flavor, add a pinch of cayenne pepper to the marinade for a subtle kick.
  • Serve with a fresh tzatziki sauce or a squeeze of fresh lemon for a bright finish.
  • Don't overcrowd the grill; cook in batches if necessary to ensure even cooking and good charring.

Method

  1. 1Cut chicken thighs into 1-inch cubes. In a large bowl, whisk together olive oil, minced garlic, lemon juice, oregano, paprika, salt, and pepper.
  2. 2Add chicken cubes to the marinade, toss to coat, and refrigerate for at least 30 minutes, or up to 4 hours for best flavor.
  3. 3Preheat your grill to medium-high heat. If using wooden skewers, ensure they have been soaked in water for at least 30 minutes.
  4. 4Thread the marinated chicken cubes, bell pepper chunks, and red onion chunks alternately onto the skewers.
  5. 5Lightly oil the grill grates to prevent sticking.
  6. 6Place the skewers on the hot grill. Cook for 12-15 minutes, turning occasionally, until the chicken is cooked through and lightly charred on all sides.
  7. 7Remove from grill and let rest for a few minutes before serving.
