Ingredients
- 🐔500 g boneless, skinless chicken thighs
- 🫒2 tbsp olive oil
- 🧄2 cloves garlic, minced
- 🍋1 tbsp lemon juice
- 🌿1 tsp dried oregano
- 🌶️½ tsp paprika
- 🧂1 tsp salt
- 🧂½ tsp black pepper
- 🫑1 bell pepper, any color, cut into chunks
- 🧅½ red onion, cut into chunks
- 🍢12 wooden skewers, soaked in water
Pro tips
- Soak wooden skewers in water to prevent them from burning on the grill.
- For extra flavor, add a pinch of cayenne pepper to the marinade for a subtle kick.
- Serve with a fresh tzatziki sauce or a squeeze of fresh lemon for a bright finish.
- Don't overcrowd the grill; cook in batches if necessary to ensure even cooking and good charring.
Method
- 1Cut chicken thighs into 1-inch cubes. In a large bowl, whisk together olive oil, minced garlic, lemon juice, oregano, paprika, salt, and pepper.
- 2Add chicken cubes to the marinade, toss to coat, and refrigerate for at least 30 minutes, or up to 4 hours for best flavor.
- 3Preheat your grill to medium-high heat. If using wooden skewers, ensure they have been soaked in water for at least 30 minutes.
- 4Thread the marinated chicken cubes, bell pepper chunks, and red onion chunks alternately onto the skewers.
- 5Lightly oil the grill grates to prevent sticking.
- 6Place the skewers on the hot grill. Cook for 12-15 minutes, turning occasionally, until the chicken is cooked through and lightly charred on all sides.
- 7Remove from grill and let rest for a few minutes before serving.
