Ingredients
- 🍗4 boneless, skinless chicken breasts
- 🥦2 heads broccoli
- 🫒2 tbsp olive oil
- 🍋1 tbsp lemon juice
- 🧄1 tsp garlic powder
- 🌶️½ tsp paprika
- 🌿½ tsp dried oregano
- 🧂 salt and black pepper, to taste
Pro tips
- For extra flavor, add a pinch of red pepper flakes to the broccoli before roasting.
- Don't overcrowd the broccoli on the baking sheet; use two sheets if necessary for even roasting.
- Marinate the chicken for up to 30 minutes for a more intense flavor, but avoid marinating for too long as the lemon juice can start to 'cook' the chicken.
- Resting the chicken is crucial for juicy results.
Method
- 1Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- 2Cut broccoli into florets. In a large bowl, toss broccoli with 1 tbsp olive oil, salt, and pepper. Spread evenly on the prepared baking sheet.
- 3Bake broccoli for 15-20 minutes, or until tender-crisp and slightly charred.
- 4While broccoli bakes, pat chicken breasts dry. In a shallow dish, combine remaining 1 tbsp olive oil, lemon juice, garlic powder, paprika, oregano, salt, and pepper.
- 5Add chicken breasts to the marinade, turning to coat evenly. Let marinate for at least 10 minutes.
- 6Heat a grill pan or outdoor grill to medium-high heat. Grill chicken for 6-8 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C).
- 7Let chicken rest for 5 minutes before slicing. Serve immediately with roasted broccoli.
