Ingredients

  • 🐟300 g cod fillets
  • 🫒1 tbsp olive oil
  • 🧄½ tsp garlic powder
  • 🌶️¼ tsp paprika
  • 🧂 salt and black pepper, to taste
  • 🥗150 g mixed salad greens
  • 🥒½ cucumber
  • 🫑½ red bell pepper
  • 🍅6 cherry tomatoes
  • 🍋1 tbsp lemon juice
  • 🏺1 tbsp extra virgin olive oil

Method

  1. 1Pat the cod fillets dry with paper towels. In a small bowl, mix olive oil, garlic powder, paprika, salt, and black pepper. Rub the mixture evenly over both sides of the fish.
  2. 2Preheat a grill pan or outdoor grill to medium-high heat. Once hot, place the seasoned cod fillets on the grill.
  3. 3Grill for 4-6 minutes per side, or until the fish is opaque and flakes easily with a fork.
  4. 4While the fish is grilling, prepare the salad. Wash and dry the mixed salad greens. Slice the cucumber and red bell pepper, and halve the cherry tomatoes.
  5. 5In a large bowl, combine the mixed greens, cucumber, red bell pepper, and cherry tomatoes.
  6. 6In a separate small bowl, whisk together the lemon juice and extra virgin olive oil to make the dressing.
  7. 7Drizzle the dressing over the salad and toss gently to combine.
  8. 8Serve the grilled fish immediately alongside the fresh salad.
