Ingredients
- 🐟300 g cod fillets
- 🫒1 tbsp olive oil
- 🧄½ tsp garlic powder
- 🌶️¼ tsp paprika
- 🧂 salt and black pepper, to taste
- 🥗150 g mixed salad greens
- 🥒½ cucumber
- 🫑½ red bell pepper
- 🍅6 cherry tomatoes
- 🍋1 tbsp lemon juice
- 🏺1 tbsp extra virgin olive oil

Method
- 1Pat the cod fillets dry with paper towels. In a small bowl, mix olive oil, garlic powder, paprika, salt, and black pepper. Rub the mixture evenly over both sides of the fish.
- 2Preheat a grill pan or outdoor grill to medium-high heat. Once hot, place the seasoned cod fillets on the grill.
- 3Grill for 4-6 minutes per side, or until the fish is opaque and flakes easily with a fork.
- 4While the fish is grilling, prepare the salad. Wash and dry the mixed salad greens. Slice the cucumber and red bell pepper, and halve the cherry tomatoes.
- 5In a large bowl, combine the mixed greens, cucumber, red bell pepper, and cherry tomatoes.
- 6In a separate small bowl, whisk together the lemon juice and extra virgin olive oil to make the dressing.
- 7Drizzle the dressing over the salad and toss gently to combine.
