Ingredients

  • 🧀300 g paneer
  • 🌶️1 red bell pepper
  • 🫑1 green bell pepper
  • 🧅1 red onion
  • 🍅100 g cherry tomatoes
  • 🫒2 tbsp olive oil
  • 🧄1 tbsp ginger-garlic paste
  • 🌶️1 tsp chilli powder
  • 🟠½ tsp turmeric powder
  • 🥘½ tsp garam masala
  • 🍋1 tbsp lemon juice
  • 🧂 salt and black pepper, to taste
  • 🌿2 tbsp fresh cilantro, chopped

Pro tips

  • For extra flavor, let the paneer and vegetables marinate for at least 30 minutes, or even overnight in the refrigerator.
  • If you don't have a grill, you can roast the paneer and vegetables in the oven at 400°F (200°C) for 20-25 minutes.
  • Serve with a side of mint chutney or a simple yogurt dip for a refreshing accompaniment.

Method

  1. 1Cut paneer into 1-inch cubes. Dice bell peppers and red onion into similar-sized pieces.
  2. 2In a large bowl, whisk together olive oil, ginger-garlic paste, chilli powder, turmeric powder, garam masala, lemon juice, salt, and black pepper.
  3. 3Add paneer cubes, bell peppers, red onion, and cherry tomatoes to the bowl. Toss gently to coat everything evenly with the marinade.
  4. 4Preheat your grill (or grill pan) to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  5. 5Thread the marinated paneer and vegetables onto skewers, alternating between them for an attractive presentation.
  6. 6Grill the skewers for 10-15 minutes, turning occasionally, until the paneer is golden brown and the vegetables are tender-crisp.
  7. 7Remove from grill, garnish with fresh cilantro, and serve hot.
