Ingredients
- 🧀300 g paneer
- 🌶️1 red bell pepper
- 🫑1 green bell pepper
- 🧅1 red onion
- 🍅100 g cherry tomatoes
- 🫒2 tbsp olive oil
- 🧄1 tbsp ginger-garlic paste
- 🌶️1 tsp chilli powder
- 🟠½ tsp turmeric powder
- 🥘½ tsp garam masala
- 🍋1 tbsp lemon juice
- 🧂 salt and black pepper, to taste
- 🌿2 tbsp fresh cilantro, chopped
Pro tips
- For extra flavor, let the paneer and vegetables marinate for at least 30 minutes, or even overnight in the refrigerator.
- If you don't have a grill, you can roast the paneer and vegetables in the oven at 400°F (200°C) for 20-25 minutes.
- Serve with a side of mint chutney or a simple yogurt dip for a refreshing accompaniment.
Method
- 1Cut paneer into 1-inch cubes. Dice bell peppers and red onion into similar-sized pieces.
- 2In a large bowl, whisk together olive oil, ginger-garlic paste, chilli powder, turmeric powder, garam masala, lemon juice, salt, and black pepper.
- 3Add paneer cubes, bell peppers, red onion, and cherry tomatoes to the bowl. Toss gently to coat everything evenly with the marinade.
- 4Preheat your grill (or grill pan) to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- 5Thread the marinated paneer and vegetables onto skewers, alternating between them for an attractive presentation.
- 6Grill the skewers for 10-15 minutes, turning occasionally, until the paneer is golden brown and the vegetables are tender-crisp.
- 7Remove from grill, garnish with fresh cilantro, and serve hot.
