Ingredients
- 🐟2 fillets salmon
- 🫒1 tbsp olive oil
- 🌿½ tsp dried oregano
- 🍅½ cup cherry tomatoes
- 🥒½ cup cucumber
- 🧅¼ cup red onion
- 🫒¼ cup kalamata olives
- 🥬2 cups romaine lettuce
- 🧀¼ cup feta cheese
- 🍋2 tbsp lemon juice
- 🍷1 tbsp red wine vinegar
- 🧂 salt and black pepper, to taste

- If you don't have a grill, you can bake or pan-sear the salmon instead.

Method
- 1Preheat your grill to medium-high heat. Pat salmon fillets dry and season with salt, pepper, and oregano.
- 2Brush salmon with olive oil and grill for 4-6 minutes per side, or until cooked through and flaky.
- 3While salmon grills, halve cherry tomatoes, slice cucumber, thinly slice red onion, and pit kalamata olives.
- 4Chop romaine lettuce and place in a large bowl. Add prepared vegetables and olives.
- 5In a small bowl, whisk together lemon juice, red wine vinegar, 1 tbsp olive oil, and a pinch of salt and pepper for the dressing.
- 6Once salmon is cooked, let it rest for a few minutes, then flake it into chunks.
- 7Add flaked salmon and crumbled feta cheese to the salad bowl.
