Ingredients

  • 🐟2 fillets salmon
  • 🫒1 tbsp olive oil
  • 🌿½ tsp dried oregano
  • 🍅½ cup cherry tomatoes
  • 🥒½ cup cucumber
  • 🧅¼ cup red onion
  • 🫒¼ cup kalamata olives
  • 🥬2 cups romaine lettuce
  • 🧀¼ cup feta cheese
  • 🍋2 tbsp lemon juice
  • 🍷1 tbsp red wine vinegar
  • 🧂 salt and black pepper, to taste

  • For extra flavor, marinate the salmon in lemon juice and oregano for 15 minutes before grilling.
  • If you don't have a grill, you can bake or pan-sear the salmon instead.
  • Add a sprinkle of fresh dill or parsley for a brighter, herbaceous note.

Method

  1. 1Preheat your grill to medium-high heat. Pat salmon fillets dry and season with salt, pepper, and oregano.
  2. 2Brush salmon with olive oil and grill for 4-6 minutes per side, or until cooked through and flaky.
  3. 3While salmon grills, halve cherry tomatoes, slice cucumber, thinly slice red onion, and pit kalamata olives.
  4. 4Chop romaine lettuce and place in a large bowl. Add prepared vegetables and olives.
  5. 5In a small bowl, whisk together lemon juice, red wine vinegar, 1 tbsp olive oil, and a pinch of salt and pepper for the dressing.
  6. 6Once salmon is cooked, let it rest for a few minutes, then flake it into chunks.
