Ingredients

  • 🍣200 g salmon fillet, skin on
  • 🫒1 tbsp olive oil
  • 🌿½ tsp dried oregano
  • 🧂1 pinch salt and black pepper
  • 🥬100 g mixed greens
  • 🥒½ cucumber, sliced
  • 🧅½ red onion, thinly sliced
  • 🫒50 g Kalamata olives, pitted and halved
  • 🍋1 lemon, juiced
  • 🧴1 tbsp extra virgin olive oil (for dressing)

Method

  1. 1Pat the salmon fillet dry with paper towels. Rub with 1 tbsp olive oil, oregano, salt, and pepper.
  2. 2Heat a grill pan or cast-iron skillet over medium-high heat. Once hot, place salmon skin-side down.
  3. 3Grill for 4-6 minutes per side, depending on thickness, until cooked through and flaky. Remove from heat and let rest.
  4. 4While salmon cooks, combine mixed greens, cucumber, red onion, and Kalamata olives in a large bowl.
  5. 5In a small bowl, whisk together lemon juice and extra virgin olive oil for the dressing.
  6. 6Drizzle the dressing over the salad ingredients and toss gently to combine.
  7. 7Flake the rested salmon into large pieces and arrange on top of the dressed salad.
