Ingredients

  • 🥩450 g lean ground beef
  • 🧅1 onion, diced
  • 🫑1 bell pepper, diced (any color)
  • 🧄2 cloves garlic, minced
  • 🍅1 can diced tomatoes (400g), undrained
  • 🖤1 can black beans (400g), rinsed and drained
  • 🌽1 can corn (200g), drained
  • 🥣1 cup beef broth
  • 🍚¼ cup long-grain white rice
  • 🌶️2 tsp chili powder
  • 🥘1 tsp cumin
  • 💨½ tsp smoked paprika
  • 🧂½ tsp salt
  • 🧂¼ tsp black pepper
  • 🧀1 ½ cups shredded cheddar or Mexican cheese blend
  • 🌿 fresh cilantro, chopped, for garnish

Pro tips

  • For extra heat, add a pinch of red pepper flakes with the spices.
  • Serve with a dollop of sour cream or a side of avocado for added creaminess.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.

Method

  1. 1In a large oven-safe skillet, brown the ground beef over medium-high heat, breaking it apart with a spoon. Drain any excess fat.
  2. 2Add the diced onion and bell pepper to the skillet and cook until softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  3. 3Stir in the diced tomatoes, black beans, corn, beef broth, uncooked rice, chili powder, cumin, smoked paprika, salt, and black pepper. Bring the mixture to a simmer.
  4. 4Reduce heat to low, cover the skillet, and cook for 15-20 minutes, or until the rice is tender and most of the liquid has been absorbed.
  5. 5Remove from heat and sprinkle the shredded cheese evenly over the top of the skillet. If your skillet is oven-safe, place it under the broiler for 2-3 minutes until the cheese is melted and bubbly. Alternatively, cover the skillet for a few minutes until the cheese melts.
  6. 6Garnish with fresh cilantro before serving. Serve hot.
