Ground Beef Burrito Skillet

Ingredients
- 🥩450 g lean ground beef
- 🧅1 onion, diced
- 🫑1 bell pepper, diced (any color)
- 🧄2 cloves garlic, minced
- 🍅1 can diced tomatoes (400g), undrained
- 🖤1 can black beans (400g), rinsed and drained
- 🌽1 can corn (200g), drained
- 🥣1 cup beef broth
- 🍚¼ cup long-grain white rice
- 🌶️2 tsp chili powder
- 🥘1 tsp cumin
- 💨½ tsp smoked paprika
- 🧂½ tsp salt
- 🧂¼ tsp black pepper
- 🧀1 ½ cups shredded cheddar or Mexican cheese blend
- 🌿 fresh cilantro, chopped, for garnish
Pro tips
- For extra heat, add a pinch of red pepper flakes with the spices.
- Serve with a dollop of sour cream or a side of avocado for added creaminess.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
Method
- 1In a large oven-safe skillet, brown the ground beef over medium-high heat, breaking it apart with a spoon. Drain any excess fat.
- 2Add the diced onion and bell pepper to the skillet and cook until softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- 3Stir in the diced tomatoes, black beans, corn, beef broth, uncooked rice, chili powder, cumin, smoked paprika, salt, and black pepper. Bring the mixture to a simmer.
- 4Reduce heat to low, cover the skillet, and cook for 15-20 minutes, or until the rice is tender and most of the liquid has been absorbed.
- 5Remove from heat and sprinkle the shredded cheese evenly over the top of the skillet. If your skillet is oven-safe, place it under the broiler for 2-3 minutes until the cheese is melted and bubbly. Alternatively, cover the skillet for a few minutes until the cheese melts.
- 6Garnish with fresh cilantro before serving. Serve hot.
