- 🍦½ cup plain yogurt
- 🍋2 tbsp lemon juice
- 🫒2 tbsp olive oil
- 🧄4 garlic cloves
- 🌶️1 tsp paprika
- 🍚½ tsp cumin
- 🌿½ tsp dried oregano
- 🌶️¼ tsp cayenne pepper
- 🧂1 tsp salt
- 🌶️½ tsp black pepper
- 🧅1 red onion
- 🫑1 bell pepper

Method
- 1Cut chicken thighs into 1.5-inch cubes. Mince garlic cloves.
- 2In a large bowl, whisk together yogurt, lemon juice, olive oil, minced garlic, paprika, cumin, oregano, cayenne pepper, salt, and black pepper to create the marinade.
- 3Add chicken cubes to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 30 minutes, or preferably 2-4 hours for maximum flavor.
- 4While chicken marinates, chop red onion and bell pepper into similar-sized pieces as the chicken.
- 5Thread chicken, red onion, and bell pepper alternately onto skewers. If using wooden skewers, soak them in water for 30 minutes prior to prevent burning.
- 6Preheat a grill or grill pan to medium-high heat. Lightly oil the grates.
- 7Place skewers on the hot grill and cook for 4-6 minutes per side, turning occasionally, until chicken is cooked through and has nice char marks.
