Ingredients
- 🍚½ cup poha (flattened rice), thick variety
- 🧀½ cup paneer, crumbled
- 🥜¼ cup peanuts
- 🧅1 small onion, finely chopped
- 🌶️½ green chili, slit
- 🌰¼ tsp mustard seeds
- 💛¼ tsp turmeric powder
- 🍃5 curry leaves
- 🌻1 tbsp vegetable oil
- 🧂 salt, to taste
- 🍋1 tbsp lemon juice
- 🌿2 tbsp fresh coriander, chopped
Pro tips
- Use thick poha as thin poha can become mushy when rinsed.
- For extra veggies, add finely chopped carrots or peas along with the onions.
- Adjust green chili to your spice preference; deseed for less heat.
Method
- 1Gently rinse the poha under running water for about 30 seconds, then drain completely and set aside to soften.
- 2Heat oil in a pan over medium heat. Add peanuts and roast until golden and fragrant. Remove and set aside.
- 3In the same oil, add mustard seeds. Once they splutter, add curry leaves and green chili. Sauté for a few seconds.
- 4Add chopped onion and cook until translucent. Stir in turmeric powder.
- 5Add the softened poha and crumbled paneer to the pan. Mix gently to combine, ensuring paneer doesn't break too much.
- 6Cook for 2-3 minutes, stirring occasionally, until everything is heated through. Add salt to taste.
- 7Remove from heat, stir in lemon juice, roasted peanuts, and fresh coriander.
- 8Serve hot and enjoy your protein-packed breakfast!
