Ingredients

  • 🍚½ cup poha (flattened rice), thick variety
  • 🧀½ cup paneer, crumbled
  • 🥜¼ cup peanuts
  • 🧅1 small onion, finely chopped
  • 🌶️½ green chili, slit
  • 🌰¼ tsp mustard seeds
  • 💛¼ tsp turmeric powder
  • 🍃5 curry leaves
  • 🌻1 tbsp vegetable oil
  • 🧂 salt, to taste
  • 🍋1 tbsp lemon juice
  • 🌿2 tbsp fresh coriander, chopped

Pro tips

  • Use thick poha as thin poha can become mushy when rinsed.
  • For extra veggies, add finely chopped carrots or peas along with the onions.
  • Adjust green chili to your spice preference; deseed for less heat.

Method

  1. 1Gently rinse the poha under running water for about 30 seconds, then drain completely and set aside to soften.
  2. 2Heat oil in a pan over medium heat. Add peanuts and roast until golden and fragrant. Remove and set aside.
  3. 3In the same oil, add mustard seeds. Once they splutter, add curry leaves and green chili. Sauté for a few seconds.
  4. 4Add chopped onion and cook until translucent. Stir in turmeric powder.
  5. 5Add the softened poha and crumbled paneer to the pan. Mix gently to combine, ensuring paneer doesn't break too much.
  6. 6Cook for 2-3 minutes, stirring occasionally, until everything is heated through. Add salt to taste.
  7. 7Remove from heat, stir in lemon juice, roasted peanuts, and fresh coriander.
  8. 8Serve hot and enjoy your protein-packed breakfast!
