Ingredients

  • 🥫1 can chickpeas (garbanzo beans), 15oz, drained and rinsed
  • 🌰¼ cup tahini
  • 🍋2 tbsp fresh lemon juice
  • 🧄2 cloves garlic, minced
  • 💧2 tbsp cold water
  • 🌿½ tsp ground cumin
  • 🧂¼ tsp salt
  • 🌶️0 tsp paprika, for garnish
  • 🥒2 medium cucumbers

Method

  1. 1Combine drained chickpeas, tahini, lemon juice, minced garlic, cold water, cumin, and salt in a food processor.
  2. 2Process until very smooth, scraping down the sides as needed. If the hummus is too thick, add more cold water, one tablespoon at a time, until desired consistency is reached.
  3. 3Taste and adjust seasonings if necessary, adding more salt or lemon juice to your preference.
  4. 4Peel and cut the cucumbers into evenly sized sticks for dipping.
  5. 5Transfer the hummus to a serving bowl, drizzle lightly with olive oil (optional), and sprinkle with paprika.
  6. 6Serve immediately with the fresh cucumber sticks.
