Ingredients

  • 🥫1 can chickpeas, drained and rinsed
  • 🍯¼ cup tahini
  • 🍋2 tbsp fresh lemon juice
  • 🧄1 clove garlic, minced
  • 💧¼ cup cold water
  • 🌶️½ tsp ground cumin
  • 🧂 salt, to taste
  • 🧂 black pepper, to taste
  • 🥕1 carrot, cut into sticks
  • 🥒½ cucumber, cut into sticks
  • 🌶️1 red bell pepper, cut into sticks
  • 🫒1 tbsp olive oil, for garnish
  • 🍂½ tsp paprika, for garnish

  • For extra smooth hummus, remove the skins from the chickpeas before processing.
  • Experiment with different vegetable sticks like celery, broccoli florets, or snap peas.

Method

  1. 1Combine drained chickpeas, tahini, lemon juice, minced garlic, cold water, cumin, salt, and pepper in a food processor.
  2. 2Process until very smooth and creamy, scraping down the sides as needed.
  3. 3If the hummus is too thick, add a little more cold water, one tablespoon at a time, until desired consistency is reached.
  4. 4Taste and adjust seasonings as necessary.

  7. 7Arrange the carrot, cucumber, and red bell pepper sticks around the hummus.
