Ingredients
- 🍚200 g idli ready mix
- 💧200 ml water
- 🧈1 tbsp oil or ghee, for greasing
- 🥣100 g sambar ready mix
- 💧300 ml water, for sambar
- 🌰¼ tsp mustard seeds
- 🍃¼ tsp curry leaves
- 🌻1 tsp oil, for tempering
Pro tips
- For extra soft idlis, add a pinch of baking soda to the batter before steaming (if not already included in the mix).
- Garnish sambar with fresh coriander leaves for enhanced flavor and aroma.
- If you prefer a thicker sambar, simmer it for a few extra minutes until it reaches your desired consistency.
Method
- 1In a bowl, combine the idli ready mix with 200ml water and whisk until a smooth batter forms. Let it rest for 5 minutes.
- 2Grease the idli moulds with oil or ghee. Pour the batter into each mould, filling them about 3/4 full.
- 3Place the idli stand in a steamer or pressure cooker with enough water at the bottom. Steam for 10-12 minutes or until a toothpick inserted comes out clean.
- 4While idlis are steaming, combine the sambar ready mix with 300ml water in a saucepan. Bring to a boil, then simmer for 5-7 minutes, stirring occasionally.
- 5For tempering, heat 1 tsp oil in a small pan. Add mustard seeds; once they splutter, add curry leaves and sauté for a few seconds. Pour this tempering into the simmering sambar.
- 6Once idlis are cooked, remove the stand from the steamer and let it cool for a minute before gently demoulding the idlis.
- 7Serve the hot, fluffy idlis with the prepared sambar.
