Ingredients

  • 🍈300 g bottle gourd (lauki), grated and squeezed
  • 🥣½ cup besan (gram flour)
  • 🧅1 onion, finely chopped
  • 🍅2 tomatoes, pureed
  • 🧄1 tsp ginger-garlic paste
  • 🧡½ tsp turmeric powder
  • 🌿1 tsp coriander powder
  • 🌶️½ tsp garam masala
  • 🍦2 tbsp yogurt, whisked
  • 🌻2 tbsp oil
  • 🌾2 cup jowar (sorghum) flour
  • 🧂 salt, to taste
  • cilantro fresh coriander, chopped, for garnish

Pro tips

  • Ensure lauki is squeezed well to remove excess water; this prevents koftas from breaking.
  • Cook koftas on medium-low heat to ensure they are cooked through and crispy outside.
  • Add yogurt to the gravy off heat or on very low heat to prevent curdling.

Method

  1. 1For kofta: Mix grated lauki, 2 tbsp besan, and a pinch of salt. Form into small balls and shallow fry until golden. Set aside. 🍈🥣
  2. 2For gravy: Heat oil in a pan. Sauté chopped onion until golden. Add ginger-garlic paste and cook for 1 minute. 🧅🧄
  3. 3Add tomato puree, turmeric, coriander powder, and salt. Cook until oil separates. 🍅🧡
  4. 4Reduce heat, stir in whisked yogurt, and cook for 2-3 minutes. Add 1 cup water and bring to a simmer. 🍦💧
  5. 5Gently add the fried kofta to the simmering gravy. Cover and cook for 5-7 minutes. Stir in garam masala. 🍲🌶️
  6. 6For roti: Knead jowar flour with warm water and a pinch of salt to a smooth, pliable dough. 🌾💧
  7. 7Divide dough into equal portions and roll out thin rotis. Cook on a hot tawa until golden spots appear on both sides. 🥞🔥
  8. 8Garnish the kofta curry with fresh coriander. Serve hot with jowar rotis. 🌿🍲
