Ingredients

  • 🥩150 g lean ground beef
  • 🍠1 medium sweet potato
  • 🥦½ cup broccoli florets
  • 🧴1 tbsp olive oil
  • 🌶️½ tsp paprika
  • 🧄¼ tsp garlic powder
  • 🧂 salt and black pepper, to taste

Method

  1. 1Preheat oven to 200°C (400°F). Peel and cube the sweet potato into 1-inch pieces. Toss with 0.5 tbsp olive oil, paprika, garlic powder, salt, and pepper.
  2. 2Spread the seasoned sweet potato on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized, flipping halfway through.
  3. 3While the sweet potato roasts, gently form the lean ground beef into a patty. Season both sides with salt and pepper.
  4. 4Heat the remaining 0.5 tbsp olive oil in a skillet over medium-high heat. Cook the beef patty for 3-5 minutes per side for medium-rare, or longer to your desired doneness.
  5. 5During the last 5-7 minutes of sweet potato roasting, add the broccoli florets to the baking sheet with the sweet potatoes to steam-roast.
  6. 6Once cooked, remove the beef patty from the skillet and let it rest for a few minutes before serving.
  7. 7Serve the lean beef patty with the roasted sweet potatoes and broccoli.
