Ingredients

  • 🥩450 g lean ground beef (90% lean or higher)
  • 🧅1 medium onion, chopped
  • 🧄2 cloves garlic, minced
  • 🫑1 red bell pepper, diced
  • 🍅1 can diced tomatoes (400g/14oz), undrained
  • 🥫1 can kidney beans (400g/14oz), rinsed and drained
  • 🫘1 can black beans (400g/14oz), rinsed and drained
  • 🌶️1 tsp chili powder
  • 🌿½ tsp cumin
  • 🍂¼ tsp smoked paprika
  • 🧂 salt and black pepper, to taste
  • 🌿2 tbsp fresh cilantro, chopped (for garnish)

Method

  1. 1Brown the lean ground beef in a large pot or Dutch oven over medium-high heat, breaking it up with a spoon. Drain any excess fat.
  2. 2Add the chopped onion and diced red bell pepper to the pot and cook until softened, about 5-7 minutes.
  3. 3Stir in the minced garlic, chili powder, cumin, and smoked paprika. Cook for another minute until fragrant.
  4. 4Pour in the undrained diced tomatoes, rinsed kidney beans, and black beans. Stir well to combine.
  5. 5Bring the mixture to a simmer, then reduce heat to low, cover, and let it cook for at least 15 minutes, allowing the flavors to meld.
  6. 6Season with salt and black pepper to taste. If the mixture is too thick, add a little water or broth.
  7. 7Ladle into bowls and garnish with fresh cilantro before serving.
