Ingredients
- 🥩450 g lean ground beef (90% lean or higher)
- 🧅1 medium onion, chopped
- 🧄2 cloves garlic, minced
- 🫑1 red bell pepper, diced
- 🍅1 can diced tomatoes (400g/14oz), undrained
- 🥫1 can kidney beans (400g/14oz), rinsed and drained
- 🫘1 can black beans (400g/14oz), rinsed and drained
- 🌶️1 tsp chili powder
- 🌿½ tsp cumin
- 🍂¼ tsp smoked paprika
- 🧂 salt and black pepper, to taste
- 🌿2 tbsp fresh cilantro, chopped (for garnish)

- For extra heat, add a pinch of cayenne pepper or a chopped jalapeño with the bell pepper.

Method
- 1Brown the lean ground beef in a large pot or Dutch oven over medium-high heat, breaking it up with a spoon. Drain any excess fat.
- 2Add the chopped onion and diced red bell pepper to the pot and cook until softened, about 5-7 minutes.
- 3Stir in the minced garlic, chili powder, cumin, and smoked paprika. Cook for another minute until fragrant.
- 4Pour in the undrained diced tomatoes, rinsed kidney beans, and black beans. Stir well to combine.
- 5Bring the mixture to a simmer, then reduce heat to low, cover, and let it cook for at least 15 minutes, allowing the flavors to meld.
- 6Season with salt and black pepper to taste. If the mixture is too thick, add a little water or broth.
- 7Ladle into bowls and garnish with fresh cilantro before serving.
