Ingredients

  • 🥣1 cup brown or green lentils, rinsed
  • 🧅1 large onion, chopped
  • 🥕2 carrots, diced
  • stalk2 celery stalks, diced
  • 🧄3 cloves garlic, minced
  • 🥫1 can diced tomatoes (14.5 oz)
  • 🥕6 cups vegetable broth
  • 🫒2 tbsp olive oil
  • 🌿1 tsp dried oregano
  • 🌿½ tsp dried thyme
  • 🧂 salt and black pepper, to taste
  • 🌿2 tbsp fresh parsley, chopped (for garnish)

Method

  1. 1Heat olive oil in a large pot or Dutch oven over medium heat.
  2. 2Add chopped onion, carrots, and celery. Sauté for 5-7 minutes until softened.
  3. 3Stir in minced garlic, oregano, and thyme. Cook for 1 minute until fragrant.
  4. 4Add rinsed lentils, diced tomatoes (undrained), and vegetable broth to the pot. Bring to a boil.
