Ingredients
- 🍦1 cup plain yogurt
- 💧1 cup cold water
- 🫚½ tsp ginger, grated
- 🌶️¼ tsp green chili, finely chopped (optional)
- 🌰½ tsp roasted cumin powder
- 🧂¼ tsp black salt (kala namak)
- 🧂¼ tsp salt
- 🌿2 tbsp fresh coriander leaves, chopped
- 🍃4 curry leaves
- ⚫¼ tsp mustard seeds
- 🌻1 tsp vegetable oil
Pro tips
- Adjust the amount of green chili and spices to your preferred level of heat and flavor.
- For extra richness, use full-fat yogurt. For a lighter version, opt for low-fat yogurt.
- Churning the buttermilk with a traditional Indian 'mathani' (hand churner) instead of a blender can give it a more authentic texture.
- Serve chilled for a refreshing experience, especially on a hot day.
Method
- 1Combine yogurt, cold water, grated ginger, chopped green chili (if using), roasted cumin powder, black salt, and regular salt in a blender.
- 2Blend until smooth and frothy, ensuring no lumps remain.
- 3Pour the buttermilk into serving glasses.
- 4For the tempering, heat oil in a small pan over medium heat.
- 5Add mustard seeds and allow them to splutter, then add curry leaves and sauté briefly until fragrant.
- 6Pour the hot tempering over the buttermilk in the glasses.
- 7Garnish with fresh chopped coriander leaves before serving immediately.
