Ingredients

  • 🍦1 cup plain yogurt
  • 💧1 cup cold water
  • 🫚½ tsp ginger, grated
  • 🌶️¼ tsp green chili, finely chopped (optional)
  • 🌰½ tsp roasted cumin powder
  • 🧂¼ tsp black salt (kala namak)
  • 🧂¼ tsp salt
  • 🌿2 tbsp fresh coriander leaves, chopped
  • 🍃4 curry leaves
  • ¼ tsp mustard seeds
  • 🌻1 tsp vegetable oil

  • For extra richness, use full-fat yogurt. For a lighter version, opt for low-fat yogurt.
  • Churning the buttermilk with a traditional Indian 'mathani' (hand churner) instead of a blender can give it a more authentic texture.

Method

  1. 1Combine yogurt, cold water, grated ginger, chopped green chili (if using), roasted cumin powder, black salt, and regular salt in a blender.
  2. 2Blend until smooth and frothy, ensuring no lumps remain.
  3. 3Pour the buttermilk into serving glasses.
  4. 4For the tempering, heat oil in a small pan over medium heat.
  5. 5Add mustard seeds and allow them to splutter, then add curry leaves and sauté briefly until fragrant.
  6. 6Pour the hot tempering over the buttermilk in the glasses.
