Ingredients

  • 🥣2 cup dosa batter
  • 🧅1 onion, chopped
  • 🥔2 potatoes, boiled and mashed
  • 🥣½ cup toor dal
  • 🍅1 tomato, chopped
  • 🥕¼ cup mixed vegetables (carrots, beans)
  • 🌶️1 tbsp sambar powder
  • 🌱1 tsp mustard seeds
  • 🌿1 tsp cumin seeds
  • 🍃1 sprig curry leaves
  • 🍾2 tbsp cooking oil
  • 🧂 salt, to taste

Method

  1. 1For the sambar: Cook toor dal with turmeric until soft. Mash lightly.
  2. 2Heat oil in a pan. Add mustard seeds, cumin seeds, and curry leaves. Sauté onion until translucent, then add tomato and mixed vegetables. Cook until soft.
  3. 3Add the cooked dal, sambar powder, and water to the vegetable mixture. Simmer for 10-15 minutes, adding salt to taste.
  4. 4For the dosa filling: In a separate pan, heat oil. Sauté chopped onion until soft. Add mashed potatoes and turmeric. Mix well and season with salt.
  5. 5To make dosa: Heat a non-stick tawa or griddle. Pour a ladleful of dosa batter in the center and spread outwards into a thin circle.
  6. 6Drizzle a little oil around the edges and cook until golden brown and crispy.
  7. 7Place a spoonful of the potato filling in the center of the dosa, then fold it in half or roll it up.
  8. 8Serve hot with sambar and coconut chutney (optional).
