Ingredients

  • 🍚¼ cup rolled oats
  • 🧅½ small onion, finely chopped
  • 🥕¼ cup mixed vegetables (carrots, peas, beans), finely chopped
  • 🧄½ tsp ginger-garlic paste
  • 💛¼ tsp turmeric powder
  • 🌶️½ tsp red chili powder
  • 🌿1 tsp garam masala
  • 🌱½ tsp cumin seeds
  • 🌻1 tsp cooking oil
  • 💧¾ cup water
  • 🧂 salt, to taste
  • 🌿1 tbsp fresh coriander leaves, chopped

Pro tips

  • For extra protein, add a spoonful of roasted peanuts or a few paneer cubes.
  • Adjust the spice level by varying the amount of red chili powder.
  • You can use quick oats for a faster cooking time, but adjust water quantity if needed.

Method

  1. 1Heat oil in a small pan or kadai over medium heat. Add cumin seeds and let them splutter.
  2. 2Add chopped onions and sauté until they turn translucent, about 2-3 minutes.
  3. 3Stir in the ginger-garlic paste and sauté for another minute until fragrant.
  4. 4Add the mixed vegetables, turmeric powder, red chili powder, and garam masala. Cook for 2-3 minutes, stirring occasionally.
  5. 5Pour in the water and bring it to a boil. Add salt to taste.
  6. 6Once boiling, add the rolled oats, mix well, reduce heat to low, and cover.
  7. 7Cook for 3-5 minutes, or until the oats are cooked and most of the water is absorbed.
  8. 8Garnish with fresh coriander leaves and serve hot.
