Ingredients
- 🍚¼ cup rolled oats
- 🧅½ small onion, finely chopped
- 🥕¼ cup mixed vegetables (carrots, peas, beans), finely chopped
- 🧄½ tsp ginger-garlic paste
- 💛¼ tsp turmeric powder
- 🌶️½ tsp red chili powder
- 🌿1 tsp garam masala
- 🌱½ tsp cumin seeds
- 🌻1 tsp cooking oil
- 💧¾ cup water
- 🧂 salt, to taste
- 🌿1 tbsp fresh coriander leaves, chopped
Pro tips
- For extra protein, add a spoonful of roasted peanuts or a few paneer cubes.
- Adjust the spice level by varying the amount of red chili powder.
- You can use quick oats for a faster cooking time, but adjust water quantity if needed.
Method
- 1Heat oil in a small pan or kadai over medium heat. Add cumin seeds and let them splutter.
- 2Add chopped onions and sauté until they turn translucent, about 2-3 minutes.
- 3Stir in the ginger-garlic paste and sauté for another minute until fragrant.
- 4Add the mixed vegetables, turmeric powder, red chili powder, and garam masala. Cook for 2-3 minutes, stirring occasionally.
- 5Pour in the water and bring it to a boil. Add salt to taste.
- 6Once boiling, add the rolled oats, mix well, reduce heat to low, and cover.
- 7Cook for 3-5 minutes, or until the oats are cooked and most of the water is absorbed.
- 8Garnish with fresh coriander leaves and serve hot.
