Ingredients

  • 🥩700 g ground beef, 80/20
  • 🥚1 egg
  • 🥛1 cup milk
  • 🍞1 cup bread crumbs
  • 🧅½ cup onion, finely chopped
  • 🧄1 tsp garlic powder
  • 🌿½ tsp dried thyme
  • 🥔1 kg potatoes, peeled and quartered
  • cream½ cup heavy cream
  • 🧈¼ cup butter
  • 🥫½ cup ketchup, for glaze
  • 🍚2 tbsp brown sugar, for glaze
  • ขวด1 tbsp Worcestershire sauce, for glaze
  • 🧂 salt and black pepper, to taste

Pro tips

  • For extra flavor, sauté the onion before adding it to the meatloaf mixture.
  • Don't overmix the meatloaf, as it can make it tough.
  • Adjust the amount of milk and cream in the mashed potatoes to achieve your desired consistency.

Method

  1. 1Preheat oven to 175°C (350°F). In a large bowl, combine ground beef, egg, milk, bread crumbs, chopped onion, garlic powder, thyme, salt, and pepper. Mix until just combined.
  2. 2Form the meat mixture into a loaf shape and place it in a baking dish. For the glaze, whisk together ketchup, brown sugar, and Worcestershire sauce in a small bowl. Spread the glaze over the meatloaf.
  3. 3Bake for 60-70 minutes, or until the internal temperature reaches 71°C (160°F). Let it rest for 10 minutes before slicing.
  4. 4While the meatloaf bakes, place the quartered potatoes in a large pot and cover with cold salted water. Bring to a boil and cook for 15-20 minutes, or until fork-tender.
  5. 5Drain the potatoes thoroughly. Return them to the hot pot and add heavy cream and butter. Mash until smooth and creamy, seasoning with salt and pepper to taste.
  6. 6Slice the rested meatloaf and serve hot with a generous portion of creamy mashed potatoes.
