- 🥛2 tbsp milk or cream
- 🍅½ cup cherry tomatoes, halved
- 🧅¼ cup red onion, finely diced
- 🥬¼ cup spinach, roughly chopped
- 🧀¼ cup feta cheese, crumbled
- 🫒1 tbsp olive oil
- 🌿½ tsp dried oregano
- 🧂 salt and black pepper, to taste

Method
- 1Whisk the eggs, milk/cream, salt, and pepper in a bowl until well combined and slightly frothy.
- 2Heat olive oil in a non-stick pan over medium heat. Add red onion and sauté for 2-3 minutes until softened.
- 3Stir in the cherry tomatoes and oregano, cooking for another 2 minutes until tomatoes just begin to soften.
- 4Add the spinach and cook until just wilted, about 1 minute.
- 5Pour the egg mixture into the pan. Let it set for about 30 seconds without stirring.
- 6Gently push the cooked egg from the edges towards the center with a spatula, allowing the uncooked egg to flow underneath.
- 7Continue scrambling until the eggs are mostly set but still slightly moist. Fold in the crumbled feta.
