Ingredients
- 🥣½ cup masoor dal (red lentils)
- 🥔1 medium potato
- 🥕1 cup mixed vegetables (carrots, peas, green beans)
- 🧅1 medium onion
- 🍅2 medium tomatoes
- 🫚1 inch ginger
- 🧄2 cloves garlic
- 🟠½ tsp turmeric powder
- 🌰1 tsp cumin powder
- 🌿1 tsp coriander powder
- 🌶️½ tsp garam masala
- 🍶2 tbsp vegetable oil
- ⚫½ tsp mustard seeds
- 🧂 salt and black pepper, to taste
- 🍃¼ cup fresh coriander leaves
Pro tips
- Adjust the amount of water to achieve your desired consistency for the dal.
- For extra flavor, temper with a dash of ghee and a pinch of asafoetida (hing) at the end.
- Serve hot with steamed basmati rice or warm rotis for a complete meal.
Method
- 1Rinse the masoor dal thoroughly and soak it in water for at least 20 minutes while you prepare other ingredients.
- 2Peel and dice the potato, onion, and tomatoes. Mince the ginger and garlic.
- 3Heat vegetable oil in a large pot or pressure cooker over medium heat. Add mustard seeds and let them splutter.
- 4Add minced ginger and garlic, sauté for 30 seconds until fragrant. Then add chopped onion and cook until translucent.
- 5Stir in turmeric, cumin, and coriander powders. Cook for one minute, then add diced tomatoes and cook until softened.
- 6Drain the soaked dal and add it to the pot along with the diced potato and mixed vegetables. Add 3 cups of water, salt, and pepper.
- 7If using a pressure cooker, cook for 3-4 whistles. If using a pot, bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes, or until dal and vegetables are tender.
- 8Stir in garam masala and garnish with fresh coriander leaves before serving.
