Ingredients
- 🧀400 g paneer, cubed
- 🌶️1 bell pepper, red, chopped
- 🫑1 bell pepper, yellow, chopped
- 🧅1 onion, red, chopped
- 🍦½ cup yogurt, plain
- 🧄1 tbsp ginger-garlic paste
- 🟠1 tsp turmeric powder
- 🍚1 tsp cumin powder
- 🌿1 tsp coriander powder
- 🌶️½ tsp garam masala
- 🍋1 tbsp lemon juice
- 🌻2 tbsp oil
- 🧂 salt and pepper, to taste
- 🥢8 wooden skewers, soaked
Pro tips
- For extra flavor, lightly brush the skewers with a little oil while grilling.
- Experiment with other vegetables like zucchini, cherry tomatoes, or mushrooms.
- If you don't have a grill, these can also be baked in an oven at 200°C (400°F) for about 20-25 minutes, flipping halfway.
Method
- 1In a large bowl, whisk together yogurt, ginger-garlic paste, turmeric, cumin, coriander, garam masala, lemon juice, oil, salt, and pepper to create the marinade.
- 2Add the paneer cubes, chopped bell peppers, and red onion to the marinade. Toss gently to ensure everything is evenly coated. Marinate for at least 20 minutes, or up to 2 hours in the refrigerator.
- 3Preheat your grill or grill pan to medium-high heat. If using wooden skewers, ensure they have been soaked in water for at least 30 minutes to prevent burning.
- 4Thread the marinated paneer and vegetables alternately onto the skewers.
- 5Place the skewers on the preheated grill. Cook for 10-15 minutes, turning occasionally, until the paneer is golden brown and the vegetables are tender-crisp with nice char marks.
- 6Serve hot, optionally garnished with fresh cilantro or a squeeze of fresh lemon juice.
