Ingredients

  • 🧀400 g paneer, cubed
  • 🌶️1 bell pepper, red, chopped
  • 🫑1 bell pepper, yellow, chopped
  • 🧅1 onion, red, chopped
  • 🍦½ cup yogurt, plain
  • 🧄1 tbsp ginger-garlic paste
  • 🟠1 tsp turmeric powder
  • 🍚1 tsp cumin powder
  • 🌿1 tsp coriander powder
  • 🌶️½ tsp garam masala
  • 🍋1 tbsp lemon juice
  • 🌻2 tbsp oil
  • 🧂 salt and pepper, to taste
  • 🥢8 wooden skewers, soaked

Pro tips

  • For extra flavor, lightly brush the skewers with a little oil while grilling.
  • Experiment with other vegetables like zucchini, cherry tomatoes, or mushrooms.
  • If you don't have a grill, these can also be baked in an oven at 200°C (400°F) for about 20-25 minutes, flipping halfway.

Method

  1. 1In a large bowl, whisk together yogurt, ginger-garlic paste, turmeric, cumin, coriander, garam masala, lemon juice, oil, salt, and pepper to create the marinade.
  2. 2Add the paneer cubes, chopped bell peppers, and red onion to the marinade. Toss gently to ensure everything is evenly coated. Marinate for at least 20 minutes, or up to 2 hours in the refrigerator.
  3. 3Preheat your grill or grill pan to medium-high heat. If using wooden skewers, ensure they have been soaked in water for at least 30 minutes to prevent burning.
  4. 4Thread the marinated paneer and vegetables alternately onto the skewers.
  5. 5Place the skewers on the preheated grill. Cook for 10-15 minutes, turning occasionally, until the paneer is golden brown and the vegetables are tender-crisp with nice char marks.
  6. 6Serve hot, optionally garnished with fresh cilantro or a squeeze of fresh lemon juice.
