Paneer Bhurji with Whole Wheat Paratha

Ingredients
- 🧀200 g paneer (Indian cottage cheese), crumbled
- 🧅2 onions, finely chopped
- 🍅2 tomatoes, finely chopped
- 🌶️1 green chili, finely chopped
- 🫚1 inch ginger, grated
- 🧄2 cloves garlic, minced
- 💛½ tsp turmeric powder
- 🍃1 tsp coriander powder
- 🌶️½ tsp garam masala
- 🧈2 tbsp oil or ghee
- 🌾2 cup whole wheat flour
- 💧¾ cup water, or as needed for dough
- 🧂½ tsp salt, to taste
- 🌿¼ cup fresh coriander leaves, chopped for garnish
Pro tips
- For extra richness, add a tablespoon of cream or milk to the bhurji just before serving.
- Adjust the green chili to your spice preference; deseed for less heat.
- Ensure the paratha dough is soft; if it's too stiff, the parathas will be hard.
- Don't overcook the paneer in the bhurji, or it will become rubbery.
Method
- 1For the paratha dough, combine whole wheat flour and a pinch of salt in a large bowl. Gradually add water and knead into a soft, pliable dough. Cover and set aside for 15-20 minutes. Divide into 8 equal portions.
- 2Heat oil or ghee in a pan. Add chopped onions and sauté until translucent. Add ginger, garlic, and green chili, cook for 1-2 minutes until fragrant.
- 3Stir in chopped tomatoes and cook until they soften and the oil separates, about 5-7 minutes. Mash them lightly as they cook.
- 4Add turmeric powder, coriander powder, and garam masala. Sauté for 1-2 minutes until the spices are well combined and fragrant.
- 5Add the crumbled paneer and salt to taste. Mix gently to combine with the मसाला (spice mixture). Cook for 3-5 minutes, ensuring the paneer is heated through but not overcooked.
- 6While the paneer bhurji is cooking, roll out each dough portion into a 6-inch circle using a rolling pin and a little dry flour.
- 7Heat a tawa or flat griddle over medium heat. Place a rolled paratha on it. Cook for about 30 seconds per side, then apply a little oil or ghee and cook until golden brown spots appear on both sides.
- 8Garnish the paneer bhurji with fresh coriander leaves.
- 9Serve the hot paneer bhurji with freshly made whole wheat parathas.
