Ingredients

  • 🍅1 cup cherry tomatoes
  • 🥒½ cup cucumber
  • 🧅¼ cup red onion
  • 🥬2 cups mixed greens
  • 🫒2 tbsp olive oil
  • 🌶️½ tsp cumin powder
  • 💛¼ tsp turmeric powder
  • 🌶️¼ tsp chili powder
  • 🧂½ tsp salt
  • 🖤¼ tsp black pepper
  • 🍋1 tbsp lemon juice
  • 🌿2 tbsp fresh cilantro, chopped

Method

  1. 1Cut the paneer into 1-inch cubes. In a bowl, toss paneer with 1 tbsp olive oil, cumin powder, turmeric powder, chili powder, salt, and black pepper until evenly coated.
  2. 2Heat a non-stick pan over medium-high heat. Add the spiced paneer cubes and cook for 5-7 minutes, turning occasionally, until golden brown and slightly crispy on all sides.
  3. 3While paneer cooks, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber, and thinly slice the red onion.
  4. 4In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion.
  5. 5Once the paneer is cooked, remove from heat and let cool slightly.
  6. 6Add the warm paneer cubes to the salad bowl with the vegetables. Drizzle with remaining 1 tbsp olive oil and lemon juice.
  7. 7Gently toss the salad to combine all ingredients. Garnish with fresh chopped cilantro before serving.
