Ingredients

  • 🧀200 g paneer
  • 🍃150 g fresh spinach
  • 🧅1 medium onion
  • 🧄2 cloves garlic
  • 🫚½ inch ginger
  • 🌶️1 green chili
  • 🟠½ tsp turmeric powder
  • 🍚½ tsp cumin powder
  • 🥘¼ tsp garam masala
  • 🧈2 tbsp ghee or cooking oil
  • 🧂 salt, to taste
  • 🌿2 tbsp fresh cilantro, chopped

  • For a creamier scramble, add a tablespoon of milk or cream along with the paneer.
  • Adjust the green chili quantity to your preferred spice level.
  • If you don't have fresh ginger, a pinch of ginger powder can be used as a substitute.
  • Ensure the spinach is thoroughly drained after washing to avoid excess water in the scramble.

Method

  1. 1Crumble the paneer into small pieces. Finely chop the onion, garlic, ginger, and green chili.
  2. 2Heat ghee or oil in a large pan over medium heat. Add chopped onion and sauté until translucent, about 3-5 minutes.
  3. 3Add garlic, ginger, and green chili. Sauté for another minute until fragrant.
  4. 4Stir in turmeric powder, cumin powder, and salt. Cook for 30 seconds, stirring constantly.
  5. 5Add the fresh spinach and cook until it wilts completely, which should take 2-3 minutes.
  6. 6Add the crumbled paneer to the pan. Gently mix everything together and cook for 3-4 minutes, allowing the paneer to warm through and absorb the flavors.
