- 🧀200 g paneer
- 🍃150 g fresh spinach
- 🧅1 medium onion
- 🧄2 cloves garlic
- 🫚½ inch ginger
- 🌶️1 green chili
- 🟠½ tsp turmeric powder
- 🍚½ tsp cumin powder
- 🥘¼ tsp garam masala
- 🧈2 tbsp ghee or cooking oil
- 🧂 salt, to taste
- 🌿2 tbsp fresh cilantro, chopped

- For a creamier scramble, add a tablespoon of milk or cream along with the paneer.
- Adjust the green chili quantity to your preferred spice level.
- If you don't have fresh ginger, a pinch of ginger powder can be used as a substitute.
- Ensure the spinach is thoroughly drained after washing to avoid excess water in the scramble.
Method
- 1Crumble the paneer into small pieces. Finely chop the onion, garlic, ginger, and green chili.
- 2Heat ghee or oil in a large pan over medium heat. Add chopped onion and sauté until translucent, about 3-5 minutes.
- 3Add garlic, ginger, and green chili. Sauté for another minute until fragrant.
- 4Stir in turmeric powder, cumin powder, and salt. Cook for 30 seconds, stirring constantly.
- 5Add the fresh spinach and cook until it wilts completely, which should take 2-3 minutes.
- 6Add the crumbled paneer to the pan. Gently mix everything together and cook for 3-4 minutes, allowing the paneer to warm through and absorb the flavors.
- 7Sprinkle with garam masala and chopped fresh cilantro. Give it a final stir.
- 8Serve hot with whole wheat toast, roti, or as a side dish.
