Ingredients

  • 🧀200 g paneer
  • 🫘100 g soya chunks
  • 🧅1 onion, large
  • 🍅2 tomatoes, medium
  • 🫚1 inch ginger
  • 🧄3 cloves garlic
  • 🌻2 tbsp cooking oil
  • 🌿1 tsp cumin seeds
  • 🍚1 tsp coriander powder
  • 🟠½ tsp turmeric powder
  • 🌶️1 tsp garam masala
  • 💧½ cup water
  • 🥛½ cup fresh cream
  • 🍞4 whole wheat rotis
  • 🧂 salt, to taste
  • 🌿 fresh coriander, for garnish

Pro tips

  • For a spicier kick, add a green chili with the ginger-garlic paste.
  • You can pan-fry the paneer cubes lightly before adding them for a slightly firmer texture.
  • Adjust the consistency of the curry by adding more or less water according to your preference.

Method

  1. 1Soak soya chunks in hot water for 15 minutes, then squeeze out excess water and set aside.
  2. 2Chop onion, ginger, and garlic finely. Puree tomatoes.
  3. 3Heat oil in a pan, add cumin seeds. Once they splutter, add chopped onion, ginger, and garlic. Sauté until golden brown.
  4. 4Add tomato puree, coriander powder, turmeric powder, and salt. Cook until the oil separates.
  5. 5Add soya chunks and water, cover, and simmer for 10 minutes.
  6. 6Stir in cubed paneer and garam masala. Cook for another 5 minutes.
  7. 7Remove from heat, stir in fresh cream, and garnish with fresh coriander.
  8. 8Serve hot with whole wheat rotis.
