Ingredients

  • 🧀200 g paneer
  • 🌿150 g fresh spinach
  • 🧅½ onion, finely chopped
  • 🌶️1 green chili, minced
  • 🍅1 tomato, diced
  • 🧄½ tsp ginger-garlic paste
  • 🟠¼ tsp turmeric powder
  • 🌿½ tsp coriander powder
  • 🍚¼ tsp cumin powder
  • 🧈1 tbsp ghee or oil
  • 🧂 salt, to taste
  • 🌿 fresh coriander, chopped, for garnish

Pro tips

  • For extra spice, increase the amount of green chili or add a pinch of red chili powder.
  • You can add other vegetables like bell peppers or peas for more flavor and nutrients.
  • Serve with whole-wheat toast or a side of yogurt for a complete meal.

Method

  1. 1Crumble the paneer into small pieces and set aside.
  2. 2Heat ghee or oil in a non-stick pan over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes.
  3. 3Add green chili and ginger-garlic paste, and cook for another minute until fragrant.
  4. 4Stir in the diced tomato and cook until it softens, about 2-3 minutes. Add turmeric, coriander, and cumin powders, mixing well.
  5. 5Add the fresh spinach and cook until it wilts completely, about 2-3 minutes.
  6. 6Fold in the crumbled paneer and salt to taste. Mix gently and cook for 2-3 minutes, allowing the flavors to meld.
  7. 7Garnish with fresh coriander and serve hot.
