Ingredients
- 🧀300 g paneer, cut into 1-inch cubes
- 🍦½ cup plain yogurt (full fat preferred)
- 🧄1 tbsp ginger-garlic paste
- 🌶️1 tsp red chili powder
- 🟠½ tsp turmeric powder
- 🌿1 tsp garam masala
- 🍃1 tsp coriander powder
- 🍚½ tsp cumin powder
- 🥭½ tsp dry mango powder (amchur)
- 🥣1 tbsp besan (chickpea flour)
- 🍋1 tbsp lemon juice
- 🌻1 tbsp mustard oil (or any cooking oil)
- 🫑1 bell pepper, cut into 1-inch cubes
- 🧅1 onion, cut into 1-inch cubes
- 🧂 salt, to taste
- 🌿2 tbsp fresh cilantro, chopped for garnish

- For extra flavor, use hung curd instead of regular yogurt for a thicker marinade.
- Soak wooden skewers in water for 30 minutes before threading if you prefer to make skewers.
- Don't overcrowd the air fryer basket; cook in smaller batches for even cooking and browning.
- A quick brush with oil halfway through cooking can help with browning and prevent drying.
Method
- 1In a large bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, coriander powder, cumin powder, amchur, besan, lemon juice, mustard oil, and salt. Mix well to form a smooth marinade.
- 2Add paneer cubes, bell pepper, and onion pieces to the marinade. Gently toss to ensure everything is evenly coated. Cover and marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
- 3Preheat your air fryer to 180°C (350°F) for 5 minutes.
- 4Arrange the marinated paneer and vegetables in a single layer in the air fryer basket. Do not overcrowd; cook in batches if necessary.
- 5Air fry for 15-18 minutes, shaking the basket halfway through, until the paneer is golden brown and slightly charred at the edges.
- 6Serve hot, garnished with fresh cilantro. Optionally, squeeze some extra lemon juice on top.
