Ingredients

  • 🧀300 g paneer
  • 🍦½ cup greek yogurt
  • 🧅1 red onion
  • 🫑1 bell pepper
  • 🧄2 tsp ginger-garlic paste
  • 🌶️1 tsp red chili powder
  • 🔥1 tsp garam masala
  • 💛½ tsp turmeric powder
  • 🌿1 tsp coriander powder
  • 🍋1 tbsp lemon juice
  • 🌻2 tbsp mustard oil
  • ☘️½ tsp kasuri methi
  • 🧂 salt, to taste
  • 🍃2 tbsp fresh cilantro, chopped

Pro tips

  • For extra smokiness, add a pinch of smoked paprika to the marinade.
  • Serve with mint chutney or a side salad for a complete meal.
  • You can air-fry these too! Cook at 375°F (190°C) for 12-15 minutes, flipping halfway.
  • Don't overcrowd the skewers to ensure even cooking and charring.

Method

  1. 1Cut paneer into 1-inch cubes. Dice red onion and bell pepper into similar-sized pieces.
  2. 2In a large bowl, whisk together Greek yogurt, ginger-garlic paste, red chili powder, garam masala, turmeric powder, coriander powder, lemon juice, mustard oil, kasuri methi, and salt.
  3. 3Add paneer cubes, onion, and bell pepper to the marinade. Toss gently to coat all ingredients evenly. Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
  4. 4Preheat your oven broiler to high or a grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes prior to prevent burning.
  5. 5Thread the marinated paneer and vegetables alternately onto skewers.
  6. 6Broil or grill the skewers for 8-12 minutes, turning occasionally, until the paneer is lightly charred and the vegetables are tender-crisp.
  7. 7Garnish with fresh chopped cilantro and serve hot.
