- 🧀300 g paneer
- 🍦½ cup greek yogurt
- 🧅1 red onion
- 🫑1 bell pepper
- 🧄2 tsp ginger-garlic paste
- 🌶️1 tsp red chili powder
- 🔥1 tsp garam masala
- 💛½ tsp turmeric powder
- 🌿1 tsp coriander powder
- 🍋1 tbsp lemon juice
- 🌻2 tbsp mustard oil
- ☘️½ tsp kasuri methi
- 🧂 salt, to taste
- 🍃2 tbsp fresh cilantro, chopped
Pro tips
- For extra smokiness, add a pinch of smoked paprika to the marinade.
- Serve with mint chutney or a side salad for a complete meal.
- You can air-fry these too! Cook at 375°F (190°C) for 12-15 minutes, flipping halfway.
- Don't overcrowd the skewers to ensure even cooking and charring.
Method
- 1Cut paneer into 1-inch cubes. Dice red onion and bell pepper into similar-sized pieces.
- 2In a large bowl, whisk together Greek yogurt, ginger-garlic paste, red chili powder, garam masala, turmeric powder, coriander powder, lemon juice, mustard oil, kasuri methi, and salt.
- 3Add paneer cubes, onion, and bell pepper to the marinade. Toss gently to coat all ingredients evenly. Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
- 4Preheat your oven broiler to high or a grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes prior to prevent burning.
- 5Thread the marinated paneer and vegetables alternately onto skewers.
- 6Broil or grill the skewers for 8-12 minutes, turning occasionally, until the paneer is lightly charred and the vegetables are tender-crisp.
- 7Garnish with fresh chopped cilantro and serve hot.
