Ingredients

  • 🧀500 g paneer, cut into 1-inch cubes
  • 🧅1 medium onion, cut into wedges
  • 🫑1 medium bell pepper (any color), cut into 1-inch pieces
  • 🥛½ cup thick yogurt
  • 🍋2 tbsp lemon juice
  • 🧄1 tbsp ginger-garlic paste
  • 🌶️2 tsp garam masala
  • 💛1 tsp turmeric powder
  • 🔥1 tsp red chili powder (or to taste)
  • 🌿1 tsp cumin powder
  • 🧂½ tsp salt
  • 🌻2 tbsp vegetable oil
  • 🍃 fresh cilantro, chopped, for garnish

Pro tips

  • For a smoky flavor, you can add a small piece of charcoal to a small bowl with a bit of ghee or oil, and place it inside a covered pot with the marinated paneer for a few minutes before grilling.
  • If you don't have skewers, you can grill the marinated paneer and vegetables directly on the grill pan or a baking sheet lined with parchment paper.
  • Adjust the chili powder to your preferred level of spice.
  • Serve hot with mint chutney or a side salad.

Method

  1. 1In a large bowl, combine yogurt, lemon juice, ginger-garlic paste, garam masala, turmeric, chili powder, cumin, and salt. Mix well to form a smooth marinade.
  2. 2Add the paneer cubes, onion wedges, and bell pepper pieces to the marinade. Gently toss to ensure everything is evenly coated.
  3. 3Let the mixture marinate for at least 30 minutes (or longer in the refrigerator for a deeper flavor).
  4. 4Thread the marinated paneer, onion, and bell pepper onto skewers, alternating the ingredients.
  5. 5Preheat your grill or grill pan to medium-high heat. Lightly brush the grill grates or pan with oil.
  6. 6Place the skewers on the hot grill and cook for 5-7 minutes per side, or until the paneer is golden brown and slightly charred, and the vegetables are tender.
  7. 7Remove from grill, drizzle with a little extra oil if desired, and garnish with fresh cilantro.
