- 🧀400 g paneer, cubed
- 🧅1 red onion, roughly chopped
- 🫑1 green bell pepper, roughly chopped
- 🌶️1 red bell pepper, roughly chopped
- 🥛½ cup dairy-free yogurt
- 🧄2 tbsp ginger-garlic paste
- 🍋1 tbsp lemon juice
- 🧡1 tsp turmeric powder
- 🍲2 tsp garam masala
- 🌶️1 tsp red chili powder
- 🍚1 tsp cumin powder
- 🧂½ tsp salt
- 🌻2 tbsp oil for brushing
- 🌿2 tbsp fresh cilantro, chopped, for garnish
Pro tips
- For extra smoky flavor, finish the skewers under the broiler for a couple of minutes until slightly charred.
- Serve with a side of mint chutney or a simple cucumber raita for a refreshing contrast.
- If you prefer a spicier kick, increase the amount of red chili powder or add a pinch of cayenne pepper to the marinade.
- This recipe can also be cooked in an air fryer at 180°C (350°F) for 12-15 minutes, flipping halfway.
Method
- 1Combine dairy-free yogurt, ginger-garlic paste, lemon juice, turmeric, garam masala, chili powder, cumin powder, and salt in a large bowl. Mix well to form the marinade.
- 2Add cubed paneer, chopped red onion, green bell pepper, and red bell pepper to the marinade. Toss gently to ensure everything is evenly coated.
- 3Cover the bowl and refrigerate for at least 30 minutes, or preferably 2-4 hours, allowing the flavors to meld.
- 4Preheat your grill or oven to medium-high heat (around 200°C/400°F). If using wooden skewers, soak them in water for 20 minutes to prevent burning.
- 5Thread the marinated paneer and vegetables onto skewers, alternating between paneer, onion, and bell peppers.
- 6Brush the skewers lightly with oil and grill or bake for 15-20 minutes, turning occasionally, until the paneer is golden brown and the vegetables are tender-crisp.
- 7Garnish with fresh cilantro before serving hot.
