Ingredients
- 🥛500 ml full-fat milk
- 🥄1 tbsp plain yogurt (starter)
Pro tips
- Use fresh, good quality milk for the best flavor and texture.
- The temperature of the milk is crucial; too hot will kill the culture, too cold will prevent it from setting.
- For thicker curd, you can reduce the milk slightly by simmering it for a few minutes before cooling.
- A small pinch of sugar or a few drops of vanilla extract can be added to the milk for a subtly sweeter curd.
Method
- 1Heat the full-fat milk in a saucepan over medium heat, stirring occasionally, until it just comes to a boil. Remove from heat.
- 2Allow the milk to cool down to a warm temperature. You should be able to comfortably hold your finger in it for 5-10 seconds (around 40-45°C or 105-115°F).
- 3Gently whisk the plain yogurt starter into the warm milk until thoroughly combined.
- 4Pour the mixture into a clean, heat-retaining container, such as a glass jar or ceramic bowl.
- 5Cover the container and place it in a warm, undisturbed spot for 6-8 hours, or until the curd sets and becomes firm.
- 6Once set, refrigerate the curd for at least 2 hours before serving to chill and firm up further.
