Ingredients

  • 🍚1 cup thick poha (flattened rice)
  • 🥜¼ cup peanuts
  • 🌰1 tsp mustard seeds
  • 🌱½ tsp cumin seeds
  • 🧅1 small onion, finely chopped
  • 🌶️½ green chili, slit
  • 🍃6 curry leaves
  • 💛¼ tsp turmeric powder
  • 🌻1 tbsp vegetable oil
  • 🍚½ tsp sugar
  • 🍋½ lemon, juiced
  • 🌿2 tbsp fresh coriander, chopped
  • 🧂 salt, to taste

Pro tips

  • Use thick poha for best results; thin poha tends to get mushy.
  • Do not over-rinse the poha, as it can make it sticky.
  • Adjust the green chili to your spice preference.
  • A squeeze of lemon at the end brightens the flavors significantly.

Method

  1. 1Rinse the poha gently under cold running water for 1-2 minutes until soft but not mushy. Drain thoroughly and set aside.
  2. 2Heat oil in a pan over medium heat. Add peanuts and fry until golden brown. Remove and set aside.
  3. 3In the same oil, add mustard seeds. Once they splutter, add cumin seeds, green chili, curry leaves, and chopped onion. Sauté until the onion turns translucent.
  4. 4Add turmeric powder, sugar, and salt to taste. Mix well.
  5. 5Add the rinsed poha to the pan and mix gently, ensuring all ingredients are well combined without breaking the poha.
  6. 6Cover the pan and cook for 2-3 minutes on low heat, allowing the poha to absorb the flavors.
  7. 7Remove from heat, stir in the fried peanuts and fresh lemon juice. Garnish with chopped fresh coriander.
  8. 8Serve hot and enjoy your delicious Poha!
