Ingredients
- 🍚1 cup thick poha (flattened rice)
- 🥜¼ cup peanuts
- 🌰1 tsp mustard seeds
- 🌱½ tsp cumin seeds
- 🧅1 small onion, finely chopped
- 🌶️½ green chili, slit
- 🍃6 curry leaves
- 💛¼ tsp turmeric powder
- 🌻1 tbsp vegetable oil
- 🍚½ tsp sugar
- 🍋½ lemon, juiced
- 🌿2 tbsp fresh coriander, chopped
- 🧂 salt, to taste
Pro tips
- Use thick poha for best results; thin poha tends to get mushy.
- Do not over-rinse the poha, as it can make it sticky.
- Adjust the green chili to your spice preference.
- A squeeze of lemon at the end brightens the flavors significantly.
Method
- 1Rinse the poha gently under cold running water for 1-2 minutes until soft but not mushy. Drain thoroughly and set aside.
- 2Heat oil in a pan over medium heat. Add peanuts and fry until golden brown. Remove and set aside.
- 3In the same oil, add mustard seeds. Once they splutter, add cumin seeds, green chili, curry leaves, and chopped onion. Sauté until the onion turns translucent.
- 4Add turmeric powder, sugar, and salt to taste. Mix well.
- 5Add the rinsed poha to the pan and mix gently, ensuring all ingredients are well combined without breaking the poha.
- 6Cover the pan and cook for 2-3 minutes on low heat, allowing the poha to absorb the flavors.
- 7Remove from heat, stir in the fried peanuts and fresh lemon juice. Garnish with chopped fresh coriander.
