Ingredients

  • 🍚2 cup thick poha (flattened rice)
  • 🥜½ cup peanuts
  • 🧅1 onion, finely chopped
  • 🟢½ cup frozen peas (optional)
  • 🌶️1 green chili, slit lengthwise
  • 🍃8 curry leaves
  • ½ tsp mustard seeds
  • 🌿½ tsp cumin seeds
  • 🟠¼ tsp turmeric powder
  • 🌻2 tbsp cooking oil
  • 🍋1 tbsp lemon juice
  • 🌿¼ cup fresh coriander, chopped
  • 🍬1 tsp sugar
  • 🧂 salt, to taste

Pro tips

  • Ensure the poha is thick; thin poha can become too mushy. Rinse just enough to soften, avoid soaking.
  • Adjust green chili to your spice preference. For milder heat, remove seeds.
  • For extra crunch, you can add a pinch of chana dal and urad dal along with mustard seeds.
  • A sprinkle of grated coconut or sev (fried chickpea noodles) can be added as a garnish just before serving.

Method

  1. 1Gently rinse the poha under running water for 1-2 minutes until soft but not mushy. Drain well and set aside to fluff.
  2. 2Heat oil in a large pan or kadai over medium heat. Add peanuts and fry until golden brown and crisp. Remove and set aside.
  3. 3In the same oil, add mustard seeds. Once they splutter, add cumin seeds, green chili, and curry leaves. Sauté for a few seconds.
  4. 4Add chopped onions and sauté until translucent. Stir in turmeric powder and optional frozen peas, cooking for 2-3 minutes.
  5. 5Add the softened poha to the pan, along with sugar and salt to taste. Mix gently until all ingredients are well combined and the poha is evenly coated.
  6. 6Cover the pan and cook for 2-3 minutes on low heat, allowing the flavors to meld. Stir occasionally.
  7. 7Turn off the heat. Stir in the roasted peanuts and fresh lemon juice. Garnish with chopped coriander.
