Ingredients
- 🍚2 cup thick poha (flattened rice)
- 🥜½ cup peanuts
- 🧅1 onion, finely chopped
- 🟢½ cup frozen peas (optional)
- 🌶️1 green chili, slit lengthwise
- 🍃8 curry leaves
- ⚫½ tsp mustard seeds
- 🌿½ tsp cumin seeds
- 🟠¼ tsp turmeric powder
- 🌻2 tbsp cooking oil
- 🍋1 tbsp lemon juice
- 🌿¼ cup fresh coriander, chopped
- 🍬1 tsp sugar
- 🧂 salt, to taste
Pro tips
- Ensure the poha is thick; thin poha can become too mushy. Rinse just enough to soften, avoid soaking.
- Adjust green chili to your spice preference. For milder heat, remove seeds.
- For extra crunch, you can add a pinch of chana dal and urad dal along with mustard seeds.
- A sprinkle of grated coconut or sev (fried chickpea noodles) can be added as a garnish just before serving.
Method
- 1Gently rinse the poha under running water for 1-2 minutes until soft but not mushy. Drain well and set aside to fluff.
- 2Heat oil in a large pan or kadai over medium heat. Add peanuts and fry until golden brown and crisp. Remove and set aside.
- 3In the same oil, add mustard seeds. Once they splutter, add cumin seeds, green chili, and curry leaves. Sauté for a few seconds.
- 4Add chopped onions and sauté until translucent. Stir in turmeric powder and optional frozen peas, cooking for 2-3 minutes.
- 5Add the softened poha to the pan, along with sugar and salt to taste. Mix gently until all ingredients are well combined and the poha is evenly coated.
- 6Cover the pan and cook for 2-3 minutes on low heat, allowing the flavors to meld. Stir occasionally.
- 7Turn off the heat. Stir in the roasted peanuts and fresh lemon juice. Garnish with chopped coriander.
